I know that I say this every week but MAN has it been CRAZY this week!!! 
I  wanted to remind everyone that this is Coral Snake season.  Snakes are everywhere and last year about this time we lost our "Thunder" to a snake bite.  So if you see a Coral snake there's 2 things to remember.  1.  The Yellow and Black rule DOES NOT APPLY in this country.  2.  There is no anti-venom.  So the end result for one who is bitten is not so good...

With the rain and the new plant growth, it brings all sorts of visitors this timer of year.  The Beetles are out, the mosquitoes, and even our eight legged little friends.  Be on the lookout for the Wolf spider as it looks creepier that it actually is.  Cool thing about the Wolf Spider is that the mom carries all of her babies on her back.  This is the time of year when the egg sacks are hatching and 1000's of little wolf spiders are everywhere.  As menacing as they look their bite (supposedly) is only as bad as a bee sting.  Now on the other end of the spectrum you might get lucky to meet this little Guy.  We found this beauty this morning on the outside wall of the house...  Although not the famous Panama Blonde Tarantula this gorgeous arachnid will give any arachnophobic a run for their money.. So Cool!!!

 
This is also Mushroom season.  So if you are a self proclaimed forager strap on your boots and keep your eyes peeled.  We went hunting over the last few days and found a wonderful bounty of wild mushrooms as well as Oyster Mushrooms.  I am still on the hunt for the Porcini and the Chanterelle with no luck yet.  We did find a very cool "Celebrity" mushroom though.  This particular mushroom is called Ganoderma Lucidium.  AKA:  Reishi.  This awesome find has been used medicinally for millennium and has been linked to curing various forms of cancer.  A wonderful mushroom that grows beautifully here in Boquete.  If you happen to find such a shroom refrigerate it till you are ready to use.  You can cut it up into small slivers and make tea with it.  Here is what it looks like...
 
Keira also wanted me to give everyone an update as to her quails. Sarah and Ashlynn have been busy laying eggs for Keira's "mini" breakfast meals.  I must admit a quail egg over easy is just the coolest thing...  Check out this week's hard word from the girls..

I am delighted to announce that after many months of asking my friend Juan Carlos (Casa De Cerdo) is opening a second location here in Boquete.  He will be open on Wednesday June 1st.  Swing by to check out his hours of operation but I believe he will be open 6 days a week  His location is right across the street from Flete Chavaler.  Let's welcome Casa de Cerdo to Boquete by getting our fresh cuts of pork from Juan as he will have inventory at that location but he will also do special orders and generally have them the next day...  This is where we get our ribs, pork chops, filet, Boston Butt, Picnic, Shoulder and ground pork.  The meat is fresh and absolutely delicious!!
 
Over the last few weeks we have had a lot of interest generated in fermented foods and products.  We appreciate all the feedback on the Sauerkraut and we are excited to have that on our menu more consistently.  This past week's flavor profile was out of control and the health benefits are also outrageous.  Get on line and spend a few minutes researching the health benefits of sauerkraut.  If you haven't tried any then this is your chance.  Swing by the booth for free samples or reserve your today.  I just started a new batch this week and it should be ready by next month...  This week we are going to have (PREORDER ONLY) Kombucha Mothers and Kefir Starts.  I only have a limited amount so when they are all sold out they are all gone.  Both of these Probiotic making machines are awesome in their own right.  I can let you know how we do it and provide directions as well but youtube is possible the best resource for information on these cultures.  They are very easy to maintain and provide an overwhelimng amount of beneficial bacteria to your daily diet.  Many have been cured of digestive issues and immune issues because of the addition of Kefir or Kombucha..  Check out the Menu Below and see more about this product.
 
Finally, we have settled on an official "2 Guys & A Cooler" logo.  Let us know what you think...  We are looking forward to the next step of "The 2 Guys Experience".  Bee on the look out!!  Our think tank has been coming up with some brilliant ideas that we believe you will love...
 
This week Chandler is making a fresh batch of Buttermilk fried Chicken.  The response was amazing and since it sold out so fast Chandler has promised to make enough this week to fill all the orders...  Also we have made a wonderful and delicious casserole with roasted vegetables and Grilled chicken.  A real taste of home with comfort food on the mind.  We were requested to have a not so spicy Thai dish that resembled "Peanut Chicken".  So this week we are featuring a wonderful take on a Thai Classic.  Also I have made 30#'s of Sweet/Mild Italian Sausage being that we sold out last week almost immediately.  If you would like a pound or two please let me know.  So if all that isn't enough I also made a tray of Baklava and Cecelia has made her delicious bread stick available this week.  Check out the dessert/bread section to see how it comes packaged...

If you want home delivery this week you must let me know in your preorder.  Send me your phone number, and give me directions to your house.  If I delivered to your place last week there is no need for additional directions..  On Monday afternoon (between 2 and 5) I will be making deliveries.  Thanks to all who took advantage of this.

Organic Chap stick:

 PLANTS
Toothache Flower (Ground Cover Exotic) $3.00:  (Spilanthes acmella) Pretty yellow and red cone-shaped flowers and leaves have properties similar to Echinacea; said to enhance the immune system, improve digestion and help nausea. The name toothache plant comes from the numbing properties it produces when the leaves and flowers are chewed, and it is used by many herbalists for this purpose. It is a tender perennial but can be grown as an annual in most areas.  Each flower contains hundreds of seeds so you can germinate and plant all over your yard!!  The gift that keeps on giving!!
 

Entrees
 
Grilled Chicken and Roasted Vegetable Casserole $8.00:  Enjoy a blast from the past.  Fresh off of Mom's dinner table we have a delicious casserole that packed with roasted vegetables, chicken, rice, cheese, and flavor.  This rice casserole is comfort food at it's core.  Try one and see for yourself.  Nothing fancy just fresh ingredients made to taste great!!  Serve this as a side dish or eat as a main course this casserole will please.  Feeds 1-3 Adults
 
Thai Peanut Chicken  $8.00:  We have turned this dish into a wonderful freezer meal that's ready to heat.  In a standard serving tin we've included Jasmine Rice and a double portion of Peanut Chicken.  All you need to do is toss it in the oven.  What you will find is perfectly cooked Chicken breast that have been marinating in a coconut milk and red curry sauce with a puree of ginger and minced garlic.  All of this is tossed together with diced red bell peppers that have been stir fried for just a minute to retain their texture.  Combine the rice and peanut chicken together for a mild Thai dish that great for lunch or dinner.  This dish has cilantro and peanuts (in case anyone has any allergies)    
 
Chicken Pot Pie  $10.00 medium Only:  Guess who's back on the menu!!  The original comfort food.  We start off with fresh pastry dough (prepared here) that uses New Zealand Grass Fed Butter.  This is the foundation.  A combination of peas, carrots, celery, and grilled chicken gets tossed in. Finally it's topped with a rich and creamy Pot Pie gravy.  The Gravy stands alone as we use our secret blend of spices to give it that Comfort Food quality.  Topped with a buttery and flaky crust this dish is a classic.  Heat and serve.  Will feed 2 – 3.  Because of the amount of work that it takes to make this dish we do not make it very often.  I hope to make 70 or 80 this week to satisfy the requests.  If you really like the pies and you have freezer space you may want to get an extra one.  We have thinned the sauce a bit so that every bite is loaded with creamy gravy...

(GF, Low Sodium, Dairy Free, Low Fat) Asian Beef and Vegetable Fusion  $8.00:  What a dish!!  This new creation blends a southern touch with an Asian flare.  A perfectly balance dish that's full of hearty vegetables and beef over a bed of Asian rice noodles, bathing in a delicious Beef and tomato consommé.  This is a divided meat dish as we have divided the proteins between mushrooms and meat.  It is Low Fat, Gluten Free, Dairy Free, and Low Sodium.  Very mild and somewhat smoky, this dish delivers all the elements.  Feeds 1 - 2 Adults

(GF) Texas Pulled Pork  $8.00:  Have you ever been in one of those moods?  This week we wanted some Texas Pulled Pork so I fired up the Big Green Egg and started smoking Boston Butt that's been injected with an apple juice marinade on Wednesday. What a week, !!!  You gotta love authentic, tender, succulent, properly cooked pulled pork that's been bathed in our very own house crafted BBQ Sauce.  A Sweet and tangy pork experience that's hard to find here in Panama.  Nice crunchy bark with a beautiful smoke ring throughout.  Cooked the only way this Texas/Cajun knows how, on a pit!!!    All that's missing is some Cole Slaw, a pickle, and an onion.  Each portion is enough for 2 healthy sandwiches.  Slap it between a bun and you got lunch in under 5 minutes!! BBQ Sauce is included to keep product from drying out in the freezing process.

(GF) Spicy Thai Penang Chicken $8.00:   Authentic Spicy Thai Curry with fresh galangal,  lemongrass, peppers, and so much more is added to coconut oil and stir fried.  The Chicken breast is added to the sauce for a  wonderful Authentic Thai Dish.  This portion is for 2 Adults.  Comes with a kaffir and peanut garnish.  Serve over Jasmine rice, noodles, or even potatoes for a complete meal.  We toned this dish down as the last time we made we made it super hot.  Let me know if you need Jasmine Rice.  ($1.00 per bag)  THIS IS A Medium SPICY DISH.

Buttermilk Fried Chicken and Country Gravy  $8.00:  A taste of the old southern comfort foods is on the menu this week.  Have you ever had a SPUD that's been tossed with sweet corn and fried chicken bits, then smothered in a country pepper gravy?  Well this week Chandler is whipping up his version of that dish by layering a bed of creamy and velvety mashed potatoes and sweet corn, buttermilk fried chicken, old fashion country pepper gravy.  This dish has everything that soul/comfort food represents. 

(GF) Spicy Cajun Boudin Smoked $7.00/ Pack:  Enjoy this Cajun Classic dish here in Boquete.   We love this southern dish that is perfect anytime and anywhere.  Absolutely delicious with a nice Cajun spicy bite to them!!!  The smoke that we used is Hickory and it gives this pork and rice sausage a depth of flavor that is simply delicious.  Grab some saltines and a Dr. Pepper and go to town!!  Aieeeee (Roughly 1 pound of Boudin)

(GF) Shepherd's Pie  $8.00: This meat pie is full of flavor.  Utilizing a tomato puree, a few seasonings, rosemary and thyme we create a wonderful beef gravy with freshly ground beef and toss it with carrots, corn, and peas for the complete package.  Topped with creamed potatoes and baked this comfort food is time tested.  Feeds 2 Adults 

(GF) Mexican Tortilla Soup $8.00: This Boquete favorite is a personal favorite as well!  Spicy and rich this hearty tomato based Mexican soup has it all.  Comes with fried crispy tortilla chips (for garnish) has loads of tender and succulent chicken meat, and tons of fresh veggies like tomatoes, onions, zucchini, black beans, corn, roasted red pepper, and more.  Seasoned with chipotle peppers, oregano, cumin and more this well balanced soup is as authentic as it comes.  Just like Abuelita used to make.  All you have to do is add a dollop of sour cream with a pinch of cheddar cheese.  A great soup that will not disappoint.
 
(V) Deluxe Creamy Mac & Cheese  $7.00:  Who doesn't just love Mac and Cheese?  This version is ultra creamy and super cheesy!  We utilize many different types of cheeses to make this amazing comfort food.  Cheddar, Mozzarella, Cremoso, and Parmesan just to name a few all come together for a rich and creamy experience that's topped with a butter breadcrumb topping.  Great as a side or as a stand-alone meal.  Bake and enjoy.  Feeds 2


 
Extras:

Gourmet Sauerkraut (Ginger, Juniper Berries, Fennel, Caraway) 16oz container  $4.00:  After all the request and emails the second batch of kraut is ready!!  What a wildly different Flavor profile than last time.  Green Cabbage mixed with grated ginger, Juniper Berries, Fennel, Caraway seed and Celtic Sea Salt makes for an outstanding gourmet "No run of the Mill" sauerkraut.  We've let this kraut ferment for about 8 weeks and it is exploding with flavor.  The subtle complex flavors of the cabbage come out when fermented in ideal temperatures that isn't too hot or too cold.  Great Crunch and Great Flavor...  You be the judge..  The sugars in the Ginger has allowed the Cabbage to ferment more slowly producing a great sauerkraut.  And best of all it's full of the beneficial bacteria that we've all come to love about Fermented food..  Delicious and Ultra Healthy.
Buttermilk  $4.00/quart: This product is made fresh each week and  is simply amazing for your baking recipes.  Special Cultures are added to the milk after some very specific heating requirements are met and the milk is then placed in a temperature controlled environment for 24 hours.  Similar to how people make yogurt.  You will love it.  Limited quantities are available. 
 
 
Pro-biotic Mothers/Grains:
 
Kombucha Starters  $7.00:  This starter is for Kombucha lovers everywhere.  It comes with a fully developed mother and about a cup of starter liquid.  I can also email you our recipe for kombucha that is just super delicious...  Just let me know.  This is a great way to get your pro-biotics.  This produce aids in digestion, joint care, detoxification, and boosts immune function. 
Kefir Grains $9.00:  Have you ever heard of Kefir?  If you have then this might be right up your alley.  I have a few starter grains available in a small mason jar full of milk.  The process is simple and the results are amazing.  These grains produce a fermented milk drink (like yogurt) that contain over 30 strains of beneficial Bacteria.  Unlike powdered Kefir Cultures which only contain about 7 strains of Bacteria, Grains produce a more pro-biotic rich environment that is reusable over and over again.  Powdered Cultures need to be replenished every month because they lose their effectiveness.  Make your own double fermented fruit kefir drink and enjoy the amazing benefits that come from drinking this regularly. 
 





Sausage:
(GF) Spicy Breakfast Sausage  $6.00 1#:  This week the Breakfast sausage is perfect.  Spicy, sweet, savory...  We've had many requests to kick up the heat so here we go.  It's not out of control hot but has a respectable bite to it.  Lots of fresh sage and other herbs mixed with clove and brown sugar.  So Good.  Perfect for white sausage gravy and biscuits.
(GF) Sweet/Mild Italian Sausage  $6.00 1#:  Mild/medium spicy and great for your spaghetti, lasagna, or anything that you want to add a bang of awesome flavor to.. 




Salad
Cobb Salad  $7:    In the mood for a crisp and refreshing salad to start the week?  This salad just takes the cake.  Chicken, tomatoes, bacon, Bleu Cheese, eggs, onions.  A mix of 4 varieties of hydroponically grown lettuce and a house crafted original cob salad dressing…   This is a fresh salad and will be good for a couple days in the refrigerator. 
 

Sides
Cooked Jasmine Rice $1.00:  Each bag has pre-cooked rice ready for you to warm up and serve with your dinner.  Easy and no hassle
 
 
Breads
Banana Walnut Bread  $5.00:   A great market Classic.  Sells out every time.  Moist and delicious full of perfectly ripe bananas and topped with walnuts. Freezes great.
Ready Bake French Bread  $5.00:  This side item is officially back on the menu.  Each pack comes with 3 pre kneaded dough loaves frozen solid.  Each dough will yield enough for 2 adults as a side to a delicious dinner.  All you have to do is thaw, allow dough to rise, and bake according to the package instructions
Ready Bake Crescent Rolls  $5.00/ bag of 5:    This product is superb!!  Each order comes with 5 crescent rolls that have been frozen solid.  All you have to do is let them rise and bake them.  These fresh Crescent rolls are big enough for a sandwich!!  Ultra flakey and really tasty.   (Limited Quantity Available)
Buttermilk Biscuits $4.00/bag of 4:  Enjoy this amazing product from the comfort of your own home.  Sold frozen and ready for the oven these biscuits are gorgeous, flakey, and  delicious.  Just pop one in the oven and BAM..  Fresh Biscuits!!
 
 
Desserts
Brownies  $1:  Treat yourself to a chocolate blast.  4 Types of chocolate and with walnuts this dessert is for the serious chocolate lover
Cranberry Scones  $1:  Baked just before the market these beautiful scones are perfect for a quick breakfast or snack on the go.  Loaded with fruit you will find these scones to be light and delicious.
Baklava  Tray of 10 prepackaged  $10.00:  Gooey and crispy and delicious.  Using exotic spices like cardamom, clove, cinnamon, nutmeg, rose water, and more this Baklava has such a wonderful and traditional flavor with a gourmet twist.  For convenience and packaging we have decided to pack the Baklava in 10 portions per plate.  This is such a great dessert as it freezes great.  You can too your Baklava in the freezer for up to 6 months and it will preserve it1s crispiness and flavor
