This month 2 Guys & A Cooler is spotlighting the powerful healing properties of fermented foods. Come and swing by our booth at the Tuesday Market and take a peek for yourself. We have the largest variety of fermented foods in the province of Chiriqui. Our fermented foods take on a whole new life with different flavors and textures. There's a real good chance you've never eaten sauerkraut like ours!! We offer fermented beet and Garlic Kraut, Ghost Chili Sauerkraut (Spicy), Caraway, dill, and celery seed sauerkraut, and a wonderful Caribbean Sauerkraut that is just an Island Party in your mouth. Can you say Caribbean Sunshine and Shado Beni!!! Our Kim Chi is the only Kim Chi that you will find using actual authentic Korean peppers. We take this delicious fermented food to a whole new level by infusing the umami powerhouse of shitake mushrooms and chopped nori. This product is Kosher as it does not have any shellfish.
Have you ever heard of Beet Kvass? Come by the booth and check it out for yourself. This liver healing blood cleansing tonic has been hailed by many as a miracle drink. Many drink this to increase energy, stamina, regularity, boost immune functions, and so much more. Bring me a bottle and I'll fill it up at the Tuesday market. ($7 per 32 ounce or $4 per pint). You only need an ounce or 2 a day.
On the horizon we are adding a few new product lines. One that we are extremely excited about is our cured and aged meats. With long preparation we have finally finished building a curing and drying chamber and look forward to having some amazing artisan Italian, American, and French cured meats. Be on the lookout for our duck proscuitto, Spicy Capocollo, Juniper Berry Lonzino, Pepper crusted Pancetta, Thyme Brisola, Traditional Salami, a wonderful Tuscan Salami called Finocchiona, Sopressata, Traditional Capocollo, Genoa Salami, and lots more... We will have slow fermented European sausages as well as fast fermented American style.....We also have a few surprises that combine the unique cooking techniques of Molecular Gastronomy with the traditional curing styles of Central Italy...
This week at the market we are very excited to have a series of Italian dishes, Chinese Dishes, American Comfort Dishes, and a lot more. Last night we made a black bean soup using some very special Artisan Bacon that we have been producing. This bacon adds another dimension of flavor to this already flavorful soup. Notes of cumin, smoked paprika, chipotle, bay leaf, honey, pepper are all kissed with a touch of pecan and apple wood smoke. You will love the Southwestern influence that this soup has. You can purchase the entire tray online (discounted) or if you bring a container you can purchase them individually at the BCP market for $1.50 each (While supplies Last). Our Baklava is perfectly crispy and perfectly gooey!! Just like they are supposed to be. We use a combination of Mediterranean spices that give our Baklava a very authentic and unique flavor.
