While it presents challenges, I've always believed in focusing on what I can do rather than what I can't. In many ways, working in the kitchen, preparing meals, and serving our customers has helped keep me active, strong, and moving forward. That's one reason this week's charity is so important to me. Organizations like Boquete's Handicap Foundation provide support, encouragement, resources, and hope to individuals and families facing challenges of their own. Their work reminds us that a strong community is one that lifts each other up. Let's talk about this week's line-up. *Authentic Chinese Hot & Sour Soup* Bold, comforting, and deeply layered in flavor, our authentic Hot & Sour Soup is crafted the traditional way — balancing earthy mushrooms, silky egg ribbons, tofu, and savory broth with the perfect harmony of heat and tang. Every spoonful delivers the signature contrast that makes this classic Chinese soup so unforgettable. For me, Hot & Sour Soup has always been the ultimate litmus test for a Chinese restaurant. It’s one of those dishes that sounds simple, but getting it right takes balance, restraint, and technique. It's very easy to overthink this dish and when that happens the whole experience falls apart. But when it’s done right? Pure comfort in a bowl. Long before the entrées ever hit the table, one spoonful of Hot & Sour Soup would tell me exactly what kind of meal I was about to have. That’s why we take ours seriously: authentic ingredients (lily flowers, wood ear mushrooms, shiitake mushrooms....), traditional technique, and the perfect balance of heat, tang, and savory depth in every bowl. Each portion is enough for 1-2 adults (32oz) *Creamy Pea and Smoked Polish Sausage Soup* Now I know pea soup doesn't always get people jumping up and down with excitement. It's not flashy. It doesn't come covered in cheese or bacon. But here's the thing... when it's made right, it's absolutely incredible. This week we made a Creamy Pea Soup loaded with smoked Polish ham, tender carrots, celery, onion, and garlic. The peas create a rich, velvety base while the smoky ham brings just the right amount of savory flavor to every spoonful. What I love about this soup is how balanced it is. The peas bring a natural sweetness, the vegetables add depth, and the smoked ham ties everything together. Nothing overpowers anything else. It's just good, honest comfort food. This is the kind of soup that reminds me why simple recipes have survived for generations. A handful of humble ingredients, treated with a little respect, can create something far greater than the sum of its parts. Grab a bowl, a piece of crusty bread, and enjoy one of the most underrated soups ever created. Each portion can feed 1-2 adults (32 oz) *Our German-Inspired Cream of Bratwurst Stew is back!* The last time we made this stew, it disappeared so fast that many customers missed out completely. The emails started rolling in asking when we'd be bringing it back, and after one spoonful, you'll understand why. We start by making authentic German-style bratwurst from scratch before lightly searing it to develop that rich, savory flavor. From there we add chunky potatoes, celery, bell peppers, and sliced carrots, creating a cream-based stew that's both hearty and satisfying. What really makes this dish special, though, is the seasoning profile. The bratwurst and the stew is flavored with traditional German spices like caraway, mace, and nutmeg. None of these flavors dominate the dish. Instead, they work together to create a warm, balanced character that perfectly complements the sausage and vegetables. The result is a rich, creamy stew that's loaded with flavor from the first bite to the last. It's hearty enough to be a meal on its own, yet refined enough that you find yourself slowing down and appreciating every spoonful. Each dish serves 1-2 adults (32oz). *Let's talk about the snack sticks and jerky.* Actually, let's start with an apology. I'm sorry. I can already tell you that I didn't make enough. Every time we put snack sticks and jerky on the menu, I convince myself that I've finally made enough to keep everyone happy. Every time I'm wrong. This week we started with more than 150 pounds of beef and got to work. First up were the smoked snack sticks. These aren't your average meat sticks. The process begins with a natural fermentation that develops a subtle tang and incredible depth of flavor. From there they are cold smoked over hickory and oak before being slowly cooked. But we're not finished yet. Once the smoking and cooking are complete, the snack sticks are transferred into a climate-controlled drying cabinet where temperature and humidity are carefully managed. There they spend several more days maturing and slowly drying. The result is a snack stick that is deeply savory, slightly tangy, smoky, and ridiculously satisfying. They're the kind of thing you buy to snack on later but somehow end up disappearing before you get home. *Then comes the jerky.* This week's lineup is part exploration, part curiosity, and part mad scientist. We're featuring: • Coffee Chocolate Chipotle Chili Jerky • Root Beer BBQ Jerky • Dr. Pepper Jalapeño Jerky • Mango Chamoy Chocolate Habanero Jerky • Pineapple Bourbon Scorpion Pepper Jerky • Bloody Mary Jerky Some of these flavors sound crazy. Some of them are crazy. Whether you're looking for something smoky, sweet, tangy, spicy, or completely unexpected, there's a flavor here with your name on it. Just don't wait too long. I’ll try and make more soon!! *Now let's talk about Our Roasted Vegetable Casserole.* I know what some of you are thinking. "A vegetable casserole? That's nice." Trust me when I say you're not getting the full picture. We start by roasting broccoli, cauliflower, potatoes, and carrots until they develop beautiful color and deeper flavor. The vegetables are lightly seasoned because we want their natural sweetness and roasted character to shine through. Then things take a turn. We add generous amounts of our signature *Texas Bowl of Chili Sausage.* If you've never had this sausage before, it's exactly what it sounds like. Somehow it manages to capture everything people love about a bowl of Texas chili and pack it into a sausage. Smoky. Savory. Rich. Loaded with deep chili flavor. It's one of those products that makes people stop and ask, "How did you do that?" The sausage itself contains cubed cheddar, gouda, pepper jack, and mozzarella. As if that wasn't enough, the entire casserole is finished with a rich four-cheese sauce made from cheddar, quesadilla cheese, Monterey Jack, and asadero cheese. By the time everything comes together, this isn't just a vegetable casserole anymore. It's roasted vegetables, smoky Texas chili sausage, smothered in a rich cheese sauce. Every bite is creamy, hearty, smoky, cheesy, and incredibly satisfying. As a side note we are currently working on a few fermented projects. The quickest will be the Authentic Korean Kim Chi. Soon after that we should have pub style Lacto-Fermented Guinness Beer Mustard (made with yellow, brown, and black mustard seeds) and......
