[News Boquete] Tuesday at the BCP. Italian Beef, BBQ Pork Ribs, Coq au Vin and More!!!


This Tuesday at the BCP we are proud to present a menu so wonderful that if you’ve never been to the Tuesday morning market you will need to make a special trip.  Last week we served hot Philly Cheese steak sandwiches as well as fresh sushi and I must say that the response was overwhelming.  Thank you for all the wonderful emails and don’t worry we will be sure to make the sushi  again!!  It looks like we will be bringing sushi back in a few weeks.  Please email me to get on our dedicated mailing list and receive a newsletter with our specials and menu.  My email address is cajuneric@gmail.com  

 

This week I am taking pre-orders on Oyster Mushroom Grow Kits.  The Kits take 2 weeks to colonize and generally start producing within the week that you receive them.  The variety of mushroom is called Pleutotis Pulmonaris or more commonly called the Phoenix Mushroom.  Each kit is extra large and under the right conditions will produce over 2 pounds of gourmet mushrooms.  The cost per kit is $10.00

 

Now we get down to the fun stuff.  Out booth at the Tuesday morning market prepares and sells prepared food that has been flash frozen and ready for you to take home.  Once you take it home you will either place your newly purchased food item back in the freezer or leave it out to thaw.  If you let it thaw then all you have to do is follow our cooking instructions and heat it up.  VOILA!!  You are ready for a high quality meal that will fill your belly without having to destroy your kitchen.

From the Kitchen

 

BBQ Pork Baby Back Ribs and St. Louis Style Ribs:  (We had these ribs last week and sold out almost the minute we posted so we are bringing them back)  These pork ribs have been marinated in our special rub and allowed to rest for 24 hours.  We then slow cook these babies for 4 hours.  Low and slow is the name of the game.  So tender that the bone is practically falling out.  If you crave a Texas style wet rib the this is a must have for dinner.  We are offering whole racks, half racks, or rib dinners that include a side of roasted garlic and sautéed kale mashed potatoes.

Chicken Pot Pie:  I was asked to keep this on the menu as it was a huge hit last week.  We tie in juicy and tender chicken with carrots, peas, celery, and our gravy mix.  This is all built in a pie pan with crusts so flaky and butter it will have your mouth watering.  We are now serving 2 sizes.  Single serving or family serving.  The single serving can feed between 1 and 2 people and the family serving can feed up to 8 people.   Take advantage of this comfort food while it is still available.

Hawaiian Pork:  This roasted pork has been carefully seasoned and cooked to perfection.  Garnished with grilled pineapples and served with a side of roasted potatoes, grilled onions, garlic a dash of paprika and bell peppers.  This is certainly a staple in Hawaii and a treat for us in the Highlands.  This is a dinner for 2.

Chicken Cordon Bleu:  We served this great dish up last week and sold out in 10 minutes.  This week we are making it even better.  Utilizing only choice chicken breasts with a light seasoning we have been able to find a wonderful cut of true smoked ham to add to it.  Filling the center with a beautiful layer of real Swiss cheese we then roll them up.  Our breading is a combination of Panko bread crumbs and other spices.  On the side we offer a great variety of lightly steamed veggies.  We finally coat the entire dish with a smoked Gouda mornay sauce that is simply divine.  Melt in your mouth!!  This is a dinner for 2.

Chicago Style Italian Beef Sandwiches will be served hot at the market for you to enjoy…  This Chicago classic is just perfect for a quick lunch.  We use our fresh herbs and blended seasonings to duplicate what is a true work of sandwich art.  This 8 inch sandwich is served with our crunchy freshly made Giardinara mix that will immediately transport you to the windy city..  

Cajun style “Dirty” Rice or Rice Dressing as it’s more commonly called:  This wonderful dish is a dinner all by itself.  We have to use maw-maw’s recipe for this one.  It was simply the best.  Fresh mushrooms, bell peppers, celery, and onions are all sautéed and lightly seasoned.  We then add  a combination of pork and beef cooked “Louisiana Style”.  A great meal that has all the essentials meat and veggies..  This will feed 2.

Mexican Chilaquiles:  This great Mexican dish starts with corn tortillas that are quartered and lightly fried.  We then add our sauce and cook them in it until they start to soften.  Pulled chicken and scrambled eggs are added as we then top them off with a bit of cheese.  Served with refried beans.  Feeds 2

Stuffed Bell peppers:  We are offering a plate of 2 stuffed bell peppers that have been stuffed with choice cut lean ground sirloin and ground pork that has been cooked with mushrooms and mixed with parmesan cheese, rice ,and our smoked cheddar.  On the side we will be serving roasted potatoes and grilled vegetables.

 French Chicken Coq au Vin:  This French Braise chicken is cooked in Burgundy wine with mushrooms, onions, and garlic.  Made popular in the US in the 60’s by Julia Child this French classic is a hearty meal with chicken that is so tender and delicious you’ll love every bite.    

 

From the Oven

Rhubarb and Strawberry Cobbler:  A great classic desert with a very special twist.  Try it and see for yourself.

Banana Walnut Bread:  Every week we bring all that we can make and leave with none.  This bread is made 8 hours before the market and is guaranteed to be moist and delicious.  Be sure to preorder this one if you want one.

Baguettes:  We will have rounds and classic baguettes available. White and multigrain

Bagels:  This week we will have onion, sesame seed, poppy seed, the everything, blueberry, and cinnamon raisin
