I hope that you are having an amazing week. My name is Eric and I am the head chef with 2 Guys & A Cooler. We have seen so many new faces over the past few months so I'd like to take just a quick second to greet all of you who are new in town. Welcome!! We have lived here for close to 15 years and I can tell you that this is truly a wonderful place to live!!
If you are not familiar with who we are let me explain. We (myself, my wife Cecelia, and our son Chandler) started a prepared meal business over 14 years ago (our two other children were too young to start cooking as Keira was only 4 and Aidan was 2 at that time). We had one goal in mind when we started our business and it was to make High Quality Prepared Meals at a price that everyone could afford, but we didn't just want to cook a meal, freeze it, the sell it. There are plenty of local options that do that. We wanted to take the prepared meal concept to a completely different place. An experience that offered the convenience and affordability of having a freezer meal in the comfort of your own home but with fresh and delicious restaurant quality, now that's a challenge I'm ready to accept!! This was back in 2011.
It's now been 14+ years since we started this journey and I am happy to say that our freezer meals are not your typical dining experience. We offer a truly dynamic menu with new and exciting options every week at prices that range from $7 - $11 for 2 adults. That's only $3.50 - $5.50 per person!! Our team (Eric 14 yrs, Cecelia 14yrs, Chandler 14 yrs, Keira 5 yrs, Aidan 3 yrs) has 50 years of collective experience in this space and it shows!! Let's take our Italian Lasagna for instance (which we now have back on our menu this week).
The foundation of any great Lasagna is the meat sauce and to make ours we use our very own house crafted Italian Pork Sausage mixed with well-seasoned freshly ground beef cooked in a beautiful tomato/herb-based sauce. We then layer this sauce with noodles, creamy ricotta, parmesan cheese, and mozzarella cheese till we can't fit anymore in the container. Once we are finished our Lasagna weighs over 2 pounds and can easily feed 2-4 adults. One thing you will notice about our Italian Lasagna is that we DO NOT cook it. You will be cooking this lasagna for the first time. This ensures that your lasagna is of the highest quality both in freshness, texture, and flavor.
Another great example is our Southern Buttermilk Biscuits and Country Style Sausage and Pepper Gravy which is also available this week. This is a fun and delicious dish to enjoy for breakfast lunch or dinner!! Let's start with the buttermilk biscuits. As you might have guessed, we DO NOT bake your biscuits. Remember our Mission Statement. We want you to experience the convenience of a freezer meal but the quality of a restaurant and that's exactly what you get here. You will get to enjoy 2 freshly baked buttermilk biscuits smothered in a mild breakfast sausage and pepper gravy. Speaking of gravy, our sausage gravy is proof that time travel exists because one bite and you'll immediately be transported to the 1950's 😂😂. Ok maybe not but in all seriousness, sauces and gravies are very important to us. Making a freezer friendly gravy is more complicated than it sounds. Frozen milk and cream base sauces tend to split when they are thawed. Once that happens there's no saving the sauce and the dish is ruined. As some of you have already experienced, this is a big issue in the Freezer Meal space. Well, our gravy has transcended this issue. When you heat up your meal, you will be amazed by the creamy and velvety texture that our product delivers. Restaurant quality in your home.
Each week we do two things; we cook and prepare new menu items and we experiment with potential menu items. Innovation has always been a driving factor in our kitchen and our new line of Sandwich Kits are a great demonstration of that. These kits are the perfect solution for a quick and easy meal. We currently offer the Chicago Italian Beef Sandwich, Philly Cheese Steak Sandwich, Italian Meatball Sub, Sloppy Joe's, Smoked Pulled Pork Sandwich, and our BBQ Chicken Sandwich. These are just the ones we currently have on the menu, but we are also working on bringing you the New Orleans Muffaletta, French Dip, and a Roast Beef Sandwich. We are also working on a new Tex Mex Beef Fajita Kit that we think will blow you mind!! Those last few are still in the testing phase though so be sure to stay tuned!!
Through the years we've opened our options by learning new facets of this craft. Everything from cheese making to dry cured meats and salami. One of my favorite things to make though is ferments. Naturally fermented food is not only rich in probiotic gut friendly bacteria but it's loaded with incredible flavor. This week have several options to choose from. We have Original Sauerkraut (with just cabbage and salt) and we have a Beet, Garlic, Caraway, and Cabbage Sauerkraut that is completely unreal!!! In addition to that we have Authentic Korean Kimchi, fermented buttermilk, and fermented kefir milk as well. One way that we like to use the Beet, Garlic, Caraway, and Cabbage Sauerkraut is to make a fermented salad with it. Start with our Beet, Garlic, Caraway, and Cabbage Sauerkraut and add orange wedges, feta cheese, raw organic honey, and mint leaves. You'll thank me later😉.
Technology has recently created a new and very interesting aspect to our business as we have started to introduce freeze-dried food. We recently released our Freeze-Dried 100% Cheese Chips and they were an immediate hit. Last week we unveiled our Freeze-Dried High-Octane Fruit Smoothie and they flew off the shelves (I'll be making more BTW). Currently we are working on creating a nutritionally balanced freeze-dried dog food mix that can be catered to your canine's specific needs. A puppy blend, an adult blend, a pregnant female blend, or even an elderly or special needs blend. This product will add to our existing Dog Treats line that we call "The Main Corso". We also have long term food storage meals. Think of it as a High Quality MRE. It's the exact same delicious meals that we offer just in the freeze-dried form. These meals have a shelf life of over 25 years and do not need to be kept in refrigeration. All you have to do is open the pack and add water. This is a great item to have on hand if you are into camping or if a situation presents itself where food becomes difficult to get.
There's so much more that I'd like to share with you but I feel like I'm being a little long winded today so I'll wrap this email up by sharing a kitchen secret with you. In our kitchen we use lots of ingredients. Primarily because we don't want every meal to taste the exact same but also because we cook lots of international dishes that use very unique spices. In total we have over 90 spices available to us at any time but there's one particular ingredient that I'm especially excited about. Much like fish sauce or parmesan cheese, this ingredient adds complex multi-dimensional flavors to food. I'm talking about an Umami boost with brothy and savory undertones.
