[News Boquete] Porchini Mushrooms, Chamomile, and Pies.... 2 Guys and a Cooler


Attention Mushroom Hunters.  Be on the look-out for the famous Porchini Mushroom.   A wonderful and edible gourmet mushroom that is popping up right now under conifer trees.

   

 

 

Hope everyone is doing great this morning.  Below is our menu for the week.  We have decided this week to reduce the number of entrees to give space for the dishes that continue to sell out each week.  We have also decided to make extra of a few items.  We are also in the season of pie’s and desserts so if you need some pastry dough or pies made let me know.  Looks like I will start making pumpkin pies next week but this week I will have Flan and Dutch apple Pie!!  We have been experimenting with making chocolate desserts like Truffles.   Yesterday we made 2 dozen dark chocolate truffels with a almond white chocolate ganosh.  So yummy.  We will also have pralines this week.  Couldn’t help myself!!

 

As a gardening bonus I also have Chamomile starts.   I have around 15 starts and they are $3.00 each…   Use this great plant to make your very own tea or culinary masterpiece..   A great addition to your garden..

Entrée’s

 

 

Crispy Onion Chicken  $8.00:  Enjoy this market favorite this week as we have been asked to make it again.  Tender white chicken breast that have marinated in a mustard, butter, and Worchester sauce.  Breaded with sweet crispy French fried onions then baked.  A delicate flavor that is wonderfully addictive.  Feeds 2

 

Mexican Chicken Burritos $6.00:  Enjoy a fajita style Mexican burrito that loaded with all the fillings.  Mexican rice, salsa, sautéed bell peppers and onions, refried beans, cheddar, mozzarella, and of course tender and juicy chicken.  One overstuffed Burrito!!  Will feed 2

(GF) Italian Pasta Frittata  $7.00:  Enjoy a real delicate taste of Italy with this Pasta Frittata.  Bacon that has been slow cooked and caramelized is the base for this frittata.  Sautéed mushrooms, black olives,  onions, leeks, and fresh parmesan as well as mozzarella cheese are all tossed together with the bacon to create a pasta dish that pan fried and cut into slices.  Topped with our homemade pasta sauce and parmesan cheese this dinner for 2 goes great with one of our salads or soups.

(V)(GF)Black Eyed Pea Curry  $7 :  This Black Eyed Pea dish is curried and slow cooked in a wonderful vegetable stock.  Collard Greens, cubed potatoes, jalapenos, and onions are added with a touch of coconut milk.  VOILA!!  The flavors are astounding.  Turmeric, Cinnamon, Clove, Nutmeg, Cumin, are just a few of the spices used to season this wonderful and delicious curry dinner.  Serve over pasta or rice.  Feeds 2.   Mild to medium Spicy.

(GF)Cajun Shrimp Etouffee  $9:  I can only make a few of this beautiful Cajun dish this week as finding the shrimp was a nice treat. If you’ve never had Cajun etoufee before this is the dinner to try.  A New Orleans staple and found in homes during dinner all across south Louisiana you will enjoy this blond roux based meal.  It’s unique flavor comes from its extraordinary spices and utilization of fresh herbs.  In its simplicity you will be fulfilled.  Feeds 2.  Serve over rice.  (LIMINTED QUANITITY WILL BE AVAILABLE)

Greek Beef and Eggplant Moussaka  $8.00:   A Greek classic this eggplant dish is built a little like a burger.  Eggplant then seasoned beef that has tomatoes, cinnamon, nutmeg, and fine herbs, parmesan cheese, and more eggplant.  Finally a nice creamy and fluffy layer of a béchamel sauce and more parmesan cheese covers the top.  Portions for 2.

Chicken, Mushroom, Bacon and Leek Casserole  $8.00:  We will make enough this week to fill (hopefully) the orders placed.  Back for another week and still selling out this dish is simply delicious!!  A real comfort food that will fill you up and put a smile on your face.  This dish has mushrooms, leeks, bacon, and chicken all slow cooked and tossed in wine and cream with our amazing chicken stock to create a perfect creamy experience.  All sits on a bed of mashed potatoes.  A nice break from your traditional casserole.  Feeds 2 adults.

Chicken Divan $8.00:  Another extremely popular dish, this week we will try to make enough to fill all the orders..  A little bit of love in the form of a casserole is how this dish has been described.  If you have enjoyed this dish when we originally made it I am here to let you know that I have acquired all of the same ingredients as before.  No substitutions.  It is the original recipe and is so yummy!!!   Full of roasted chicken, blanched broccoli, mushroom and cheddar cheese with a nice bread and parmesan cheese coating on top…  Feeds 2

 

Chicken Pot Pie  $10.00:  A true comfort food.  Rich creamy inside filled with carrots, celery, peas, and chicken, wrapped in a buttery and flakey pastry.  Heat and serve.  Will feed 2 – 3

 

 

 

Salads:

 

 

Cobb Salad $7.00:  This wonderful salad  uses only the freshest ingredients.  Organically grown  lettuce, fresh tomatoes, free range eggs, Avocados  (Depending on Availability), slow cooked chicken, onions,  hickory smoked bacon, and bleu cheese with my very own Cobb  salad vinaigrette.  A delicious salad that will fill  you up. Comes with a house crafted dressing on the

 

 

 

 

Extras:

 

Pie Crust (Puff Pastry) Dough $4.00:  Ready for the holiday season?  This dough is the crust that we utilize for our pot pies.  Buttery and flakey this dough will make the perfect topping for any pie you decide to make.  Also great for making desserts or entrees.  Comes in 1# balls and freezes great.

 

White Rice Cooked $1.00

 

Mexican Rice  $5.00

 

 

 

Treats:

 

Belgium Style Waffles (pack of 4) $5.00:  Nice big fat waffles are ready for you to toss in your freezer.  When you are ready to serve just heat up in a toaster oven and enjoy..  Fast, convenient, and delicious.. 

 

Square Dutch Apple Pie $6.00:  Ok, Not your traditional shape Apple Pie but here in Panama we do what we can right?  We had some request for this dessert so we just decided to make it in our rectangle tin.  Delicious granny smith apples in a blend of spices are layered over our pie crust and topped with a Brown Betty Crumble.  Irresistible.  Feeds 2 really good pie portions.  Serve with Ice cream.

New Orleans Walnut Pralines  $1.00:  I couldn’t help myself with this item.  Want something sweet.  This little powerhouse is absolutely delicious!!!   A smooth and creamy cookie style candy that literally melts in your mouth.  One of the most complicated desserts I’ve ever made and proud to offer them this week.  If you’ve never had a South Louisiana Praline then you must come by the booth.  It’s an experience.

Death by Chocolate Brownies  $1.00:  There is nothing more to say about this dessert.  4 types of chocolate, 3 styles of cooking, and a perfect bake for the best brownie available in Chiriqui!!  Be sure to pre-order yours as it sells out each week…

Cranberry and orange scones  $1.00:  Moist and delicious this European breakfast staple is at the BCP!!.  We will have a limited quantity at the table so come by and get yours.  Pre orders are helpful.. 

Mexican Flan  $6.00:  Enjoy a fabulous Mexican dessert that is made fresh and exclusively for the market.  If you had a chance to attend our Mexican event this is the same recipe that I served up that evening.  Will last up to 1 week in your fridge.  Perfect for get togethers or any occasion.   Very rich and delicious this custard style dessert will feed up to 8 adults..

 

Breads

Pumpkin Spice Bread  $5.00:  A delicious soda bread with all of the taste of the fall season.  Fresh pumpkin, cinnamon, clove, nutmeg, vanilla, and more gives this great sweet bread a perfect breakfast treat.  Great anytime and makes a great gift for a friend or neighbor. 

Zucchini Bread  $5.00:  A delightful addition to our soda bread line-up.  This veggie bread contains all the delicious qualities of a perfect soda bread.  You would never guess that there is zucchini in this recipe but there is.  So delicious and moist you’ll love every bite!!

Banana Walnut Bread  $5.00:   This bread has been around since the beginning of our booth at the BCP.  Every week we make as many as we can and every week we sell out.  This bread freezes great and is as moist as it comes.  Some of you might notice that the breads are now almost double in size.  We have improved the recipe and kept the price the same.  We hope you enjoy.
