[News Boquete] 2 Guys & A Cooler Have Upgraded.....Just in Time!!

Great day everyone,

 

I wanted a chance to make a quick post with this week’s menu.  Recent upgrades to our business has allowed us to expand our menu.  If you are new in town, Welcome!!  We are a family run business that caters to preparing delicious & economical frozen meals.  We have a huge menu that is full of diversity.  Many types of options are available so be sure to check it out.  All dinners are sold frozen and are generally enough to feed 2 Adults.  We try to make dinner or lunch easy and convenient for you to enjoy while living in Paradise…  We are not your ordinary cooks…  We do it ALL…  The bigger the challenge the better..  We are always trying to be innovative, creative, inspired so that each week you will not know what to expect.  I am proud to say that we have maintained that level of energy and enthusiasm since the beginning.  Allow us to do the cooking for you…   Try an entrée for yourself and see…   At least get a brownie….(you’ll be hooked)  

 

We have a booth at the Tuesday BCP Market.  Located across from Emily’s Honey stand and right next to Dr. drew the  Chiropractor.  We are there between 9am and 12pm every Tuesday.  From time to time we get crazy at the booth.  Last week at the market we are happy to report that 100% of all orders were filled.  There were no shortages and no substitutions!!  We are implementing a new inventory accounting system that will enable us to keep track of what is being ordered.  We thank you for your patience…

As a bonus we are always trying to find better quality ingredients, non gmo, no msg, organic when possible.  We use more butter than any other ingredient in our kitchen.  So for us a good quality butter is a must.  It is our pleasure to announce that we are switching to Anchor pure grass-fed  New Zealand Butter.  Grass Fed butter is not only extremely delicious but also superior in health benefits than grain fed butters.  I know that you will enjoy the end result.

We have been asked to also keep certain Vegetarian items on the menu.  So we will offer a rotation of entrees from week to week.  This week Eggplant Parmesan is available..  As always we will try to have Gluten Free when possible..

We will have Custard Filled Chocolate Éclairs this week, Pumpkin Spice Bread, Amazing Brownies, and of course Cranberry Scones!!   Our new method of preparation has resulted in super  moist, flakey, and ultra delicious scones…

Entrée’s

 

Italian Lasagna with fresh baked French bread  $9.00:  A great combination of sweet Italian sausage and ground beef this lasagna uses nothing but the freshest ingredients.  Ricotta, parsley, our very own house crafted lasagna sauce that is simply loaded with fresh veggies and bursting with flavor.  I have increased the amount of noodles and layers to hold up better when you serve it so that it stands on its own.  Comes with a pre-kneaded dough ball that bakes while the lasagna bakes to deliver a fresh piece of French bread with your meal.  The dough is in its own compartment so as to avoid the “Soggy Bread” issue.  Feeds    

Sheppard’s Pie  $8.00:  A special type of comfort food that is simple and delicious.  Minced meat tossed with peas and carrots and covered with a delicious creamed mashed potato topping.  Bake and enjoy.  So yummy!!  Feeds 2

French onion Crispy Chicken  $8.00:  Another crowd please this chicken dish is simply delicious.  Perfectly cooked chicken breast that’s been marinating in a butter, mustard, and Worchester sauce.  All topped with our very own crispy French fried golden onions.  What you end up with is a balanced combination of flavors that completely complement each other.  Unforgettable.  Now with more chicken.  Feeds 2 Adults.  Served over a bed of Rotini with roasted red pepper sauce and garlic parmesan. 

Cajun Chicken and Sausage Gumbo  $8.00:  Enjoy this delicious staple from the bayou.  We start off by making a flavorful roux and then adding all of the veggies and sausage.  After a slow cook we toss in a combination of white chicken meat and voila.  There you have it.  Tender and juicy chicken with caramelized sausage that pairs great with a potato salad.  Perfect in every way.  Medium spicy.  Simply heat and serve.  Serves 2 and is best over rice.

(V) Eggplant Parmesan  $8.00:  A Great vegetarian dish that sold out last week.  We had to promise to make it again this week.  Portioned for 2 this dinner is full of flavor and texture.  Nice velvety breaded Eggplant is layered with mozzarella, parmesan cheese, and house crafted parmesan Tomato sauce with roasted red peppers and sun dried tomatoes..  Enjoy a delicious vegetarian option this week.  Feeds 2

Broccoli and Chicken Divan (Casserole)  $8:  A crowd pleaser.  This wonderful casserole is full of flavor.  Chicken cubes and broccoli make up this dish as it is layered with cheddar cheese a bread crumb topping, and a delicious gravy that is made up of white wine, sour cream, and mushroom soup.  Feeds 2

Eric’s Kicked Up Meatloaf  $8:  Delicious beef and pork mixed with an assortment of grilled and sautéed vegetables, combined and tossed with an original meatloaf sauce…   SPICY AND MILD  AVAILABLE.  PLEASE LET ME KNOW WHEN YOU ORDER.

(GF) Boquete Chili  $8.00:  Beef, Pork, Beer, Bacon, Beans are all part of this awesome chili.  Smoked chili’s and exotic spices give it it’s unique flavor.  If you’ve ever had our chili before this is the same exact one.  Last week we sold over 60 pounds and we were asked to have it on the menu again so, Thank you.   Slow cooked tender beef and pork in beer and spices make this a great medium spiced chili.  Serve over rice or allow it to stand alone this chili is simply superb.  Top is off with a dollop of sour cream, cheddar cheese, and some fresh green onions for a classic chili experience.  2 POUNDS IN EACH SERVING  Back by Popular demand…

Filet Mignon Beef Stroganoff  $9.00:  A classic comfort food.  This dish is rich and creamy.  Tender beef in a sour cream sauce and loaded with fresh button mushrooms and slivered onions..  This dish has it’s authentic flavor because of how we prepare the beef stock and slow cook the Filet. Feeds 2.   (Egg noodles included.)

(GF) Chicken Tikka  $8.00:  This classic Indian dish is loaded with exotic flavors!  First we marinate white chicken breast in a yogurt spice sauce.  After a day we then grill them and toss the chicken pieces in a tomato and cream based sauce that’s loaded with jalapeno peppers and exotic Indian seasonings..  Recommended to serve with Jasmine rice or noodles.  Let me know if you need any Jasmine rice (Cooked $1.00 per bag) 

(GF) Butter Chicken  $8.00:   Awesome Butter Chicken is loaded with tender white chicken meat, ground almonds, fresh ginger, and gourmet exotic spices.  So delicious.  A nice adventure for your palate.  This is a relatively mild Indian dish so it’s perfect if you’re not into spicy food but still want to take a food adventure.  Feeds 2.  Serve over Jasmine Rice.  (Rice not included)

Angel Chicken  $9.00:  This delicious pasta dish has such a wonderful and mature taste that your senses will be awakened.  Popping with flavor this button mushroom dish uses white wine, cream cheese, and our home made Italian Dressing to slow cook chicken thighs till they are falling apart tender.  Served over a bed of Linguini Pasta this is a dinner for 2 adults.  

 

Soups

(V) Cream of Mushroom Soup  $10.00:  Our Mushroom soup is a great base for most casseroles or as a standalone meal..   We only used fresh mushrooms (Button, Crimini, Porcini, Chanterelle, Portobello, and oyster) for this dish as each mushroom brings its own unique flavor and balance to every bite.  This week we used over 15 pounds of mushrooms to make this amazing soup.    Serves 2 adults.
