I know this sounds completely crazy but I am doing an experiment... If you feel like playing feel free. There is only 1 Rule. You can't use the internet to answer any of the following questions. You can only go by memory... There's no right or wrong answer. I'll explain later after the answers are in. I think that you will be surprised. Here are the questions:

Ok Now on to this week's menu!! Today I was a bad boy and decided to make some Cajun Pork Cracklins (Gratons).. This crazy snack is very popular in South Louisiana. It is basically pork belly cut up and boiled in pig fat then flash fried in the same fat (much higher temperature) till they pop or crack as they say. After it's done it's seasoned quite heavily then eaten fresh. I must admit this used to be a very appetizing snack, but this time I could only think about one thing as I was popping these pop corn size pork bites into my mouth. My poor arteries and my poor heart. This has to be the most unhealthy thing on the planet. So my conscious will not let me make this again. No heart attacks today...
I am very excited. Last week we made a deep south Cajun sausage so this week we decided to go North to Wisconsin!! This week we have freshly made Sheboygan Style Brats. I must admit as a Bratwurst super eater these are quite delicious. Fresh pork belly and shoulder ground up and mixed with delicious herbs and spices. These brats contain no preservatives, no nitrite, no corn syrup, no artificial flavors. Just meat and seasonings. They have been poached so they are ready for you to thaw and grill, boil, pan fry and eat. Serve with fresh sauerkraut, with French fries, potato salad, hard rolls or whatever!! Theses Brats are so scrumptious.. Also Chandler's Honey Chicken is back this week!! The requests have been overwhelming and Chandler says Thank you!! Let me know in your preorder if you would like to order a plate. Finally we will have our ever popular Chicken Tikka Masala this week also. Our Tikka sauce has received rave reviews and we have been asked to sell this vegetarian sauce as a standalone menu item. So we will have it both ways. With chicken and without. This sauce is completely vegetarian and has such depth of flavor that pairs well with fresh veggies, meats, even tofu. Talk about authentic!! So be sure to check out our menu items and see if anything jumps out at you this week. I will have Chocolate Éclairs at the Booth also. Lots of goodies!! See you soon.

If you want home delivery this week you must let me know in your preorder. Simply let me know, send me your phone number, and give me directions to your house. If I delivered to your place last week there is no need for additional directions.. On Monday afternoon (between 2 and 5) I will be making deliveries. Last week they went off without a single problem. Thanks to all who took advantage of this.

Chinese Honey Chicken $8.00 : This Chinese favorite makes its way into our menu by way of Chandler. A delicious twist to this Chinese takeout classic. Honey Chicken is a mild Chicken dish that has been gently tossed in a sweet and tangy Honey Sauce. Coated with a corn starch slurry this batter makes this dish unique. Almost like a tempura batter. Paired with a delicious side of Chinese Fried Rice this dish is for 2 adults. (Contains an ingredient that has a trace amount of MSG in it. Also has a touch of sesame seed oil in the fried rice.) NOW WITH MORE CHICKEN AND MORE SAUCE!!!!
(GF) Chicken Tikka Masala $8.00: In the mood for some Indian food? This classic Indian dish is loaded with exotic flavors! First we marinate white chicken breast in a yogurt spice sauce. After a day or so we then grill them in olive oil and toss the chicken pieces in a cream based sauce that's loaded with tomato sauce and exotic Indian seasonings.. Recommended to serve with Jasmine rice or noodles. Let me know if you need any Jasmine rice (Cooked $1.00 per bag) Mild-Medium Spicy. **Extra Virgin Olive Oil is used to sauté veggies**
(GF) Vegetarian Tikka Masala Sauce $5.00: This Exotic Sauce speaks for itself. Ingredients imported from India. Flavors that jump out at you and spiced just perfectly. All you need to do is thaw and add your very own meats or veggies. This sauce uses EVOO as its oil for sautéing the veggies This is for 16oz. (1 Pint) Mild-Medium Spicy.
(GF) Sheppard's Pie $8.00: This meat pie is full of flavor. Utilizing Rosemary and thyme we create a wonderful beef gravy with freshly ground beef and toss it with carrots, corn, and peas for the complete package. Topped with creamed potatoes and baked this comfort food is time tested. Feeds 2 Adults
Mushroom smothered Pork chops and Mashed Potatoes $10.00:This pork chop dish is ridiculous. I had my butcher slice nice big chops so we could pan sear them in olive oil then allowed to braise in a cream and Button mushroom sauce. With a handful of sautéed onions and roasted garlic this pork dish is loaded with flavor and is remarkably tender. Smothered with a cream of mushroom soup and served with a side of creamed garlic mashed potatoes this meal feeds 2 adults. *(Contains a small amount of Condensed Cream of Mushroom Soup which has MSG in it)*
(LF) Almond Crusted Tilapia $9.00: This Low Fat fish dish is beautiful, light, and delicious. Pan fried in Olive oil this fish is crusted with ground almonds and parmesan cheese and is perfectly seasoned.... So yummy. Served with olive oil roasted vegetables and fresh herbs (Cauliflower, carrots, Broccoli, onions, and garlic). Feeds 2 adults
Wisconsin Brats $4.00/pack of 2: This dish is simple. 2 Brats wrapped and ready for you to enjoy. Fresh ingredients and authentic flavor. I chill and grind the pork in stages so as to not destroy the integrity of the meat. We do several grinds and season as we go.. Finally we make the links. They average out a quarter pound each link. Nice and plump you will love every bite!!
Spicy Cajun Boudin Smoked $7.00/ Pack: Enjoy this Cajun Classic dish here in Boquete as we usher in the arrival of our new meat grinder!! The BIG BITE!!! Anyway. We love this southern dish that is perfect anytime and anywhere. We have made 2 flavors for you to enjoy. Smoked and regular. Both of them have a delicious Cajun spicy bite to them!!! The smoke that we used is Hickory and it gives this pork and rice sausage a depth of flavor that is simply delicious. Grab some saltines and a Dr. Pepper and go to town!! Aieeeee (Roughly 1 pound of Boudin)
Spicy Cajun Boudin Regular $7.00/ Pack: This is the regular version of our Cajun Boudin. Pronounced (Bu-Dan). Nice and spicy this pork sausage has everything that you love in boudin. Rice, celery, bell pepper, onion, garlic, lots of seasonings, pork meat, a hint of liver, and a whole lot of LOVE!!!.. These have been baked so they are completely ready for you to eat. As they say in Scott, Louisiana (outside Lafayette) Just Heat and Eat!!! These can be BBQ'ed, steamed, micro-waved, whatever you want.
Spicy Boudin Stuffed Pistolettes $1.00/ each: This is a great addition as we are looking at a complete Cajun sandwich. To do this right you have to be committed to the process. Otherwise you can just heat it up and eat it regular. But if you want to really enjoy this bread the way it was designed you need to warm it up in the oven till it's nice and hot the toss the bun in a pot with hot oil for 1 minute and fry it. This special bread is designed and crafted to be fried so you get a wonderful crispy texture and a delicious filling. In this case it's BOUDIN!!! Enjoy while they last. Limited quantity available
Medium Spicy Cajun Chicken and Sausage Gumbo $8.00: Enjoy this delicious staple from the bayou. We start off by making a flavorful dark and rich roux, then adding all of the veggies and pork sausage. After a slow cook we toss in a combination of white and dark chicken meat and voila. There you have it. Tender and juicy chicken with caramelized sausage that is Cajun comfort food to the core. Perfect in every way. Simply heat and serve. Serves 2 and is best over rice (Rice not included). Eat with saltine crackers and potato salad on the side.
Overstuffed Mexican Chicken Burritos $7.00: This Burrito is truly a gourmet burrito. We start with a delicately prepared bed of Mexican Rice. We then add sautéed bell peppers and onions that have been slightly seasoned and softened. Tomato salsa comes next. Finally we lay to rest our grilled fajita cooked chicken breast that has been covered in our special 3 cheese blend. We are now officially OVERSTUFFED!!! But Wait! There's more.. We add olives, fresh cilantro, jalapenos, and more cheese.. This is 1 BIG Burrito!!. Feeds 2.
Cajun Rice Dressing (AKA Dirty Rice) $6.00: In Welsh, Louisiana my Grandmother would make this dish for family gatherings. We have tweaked Mawmaw's recipe just a touch to give it our very own spin. Using fresh mushrooms, ground pork, ground beef and our blend of herbs and spices this southern side dish is fit for a proper meal. Very tasty and mild. Feeds 2.
Creamy Chicken and Veggie Casserole $8.00: Who doesn't just love a creamy delicious casserole!! Great dish for when you are in the mood for some comfort food. Layered with rice, cheddar cheese, broccoli, zucchini, red peppers, green peppers, cauliflower, fresh mushrooms, and a mushroom cream sauce. (has cream of mushroom soup in it which contains a form of msg in it).
Chicken Cordon Bleu: $9.00 A delicious dinner for 2 that has withstood the test of time. We love making this dish because it not only is one of our most popular menu items but it is also supremely delicious. Breaded and baked our chicken cordon bleu comes out juicy and tender every time. Stuffed with gourmet Swiss Cheese and Smoked cutlets of ham you will wish you had ordered an extra. Comes with steamed broccoli and carrots smothered in a smoked Gouda Morney sauce.
Angel Mushroom Chicken $9.00: This delicious pasta dish has such a wonderful and mature taste that your senses will be awakened. Popping with flavor this dish uses white wine, top shelf Anchor (New Zealand) cream cheese, fresh button mushrooms, and our home made Italian Dressing to slow cook chicken thighs till they are falling apart tender. Served over a bed of Angel Hair Pasta this is a dinner for 2 adults. (This dish has condensed cream of mushroom soup in it which has a form of msg in it.)
Asian Sweet, Sticky, & Spicy Chicken $9.00: A real flavor blast. We use the trifecta of ingredients for the sauce to coat these breaded chicken bites. Sweet(Brown Sugar), Sticky (Honey), and Spicy (Srirachi hot sauce) says it all with this dish. A wonderful assortment of stir fried veggies and grilled pineapple next to a bed of Jasmine Coconut Rice and Black Rice (Forbidden Rice).Now with more rice, more chicken, more broccoli, and more sauce!! This is a Spicy Dish. Feeds 2
Italian Chicken Tetrazzini $11.00 : We were asked to make Tetrazzini so we went all in. Talk about top shelf. We used loads of fresh button mushrooms, peas, caramelized onions, roasted garlic, fresh thyme, fresh parsley, parmesan cheese, cream, slow grilled chicken breast that's so juicy and tender, and a linguine pasta. All is tossed in our very own white wine cream sauce and topped with a butter and bread crumb topping. This Gourmet dinner is for 2 Adults
Thai Chicken Massaman Curry $8.00: Who wants Thai food? This awesome dish is a delicious blend of authentic Thai flavors. Considered a smooth and spicy curry, our massaman curry paste has a great blend of fresh galangal, kaffir lime, peppers, fish sauce, and many other ingredients that give it it's amazing flavor. Stir-fried in coconut oil and tossed with tender thigh meat. This chicken curry is slow cooked with thinly sliced wedge onions and cubed potatoes. After it's all said and done the coconut milk adds a touch of sweetness to a mildly spicy Thai dish with tender chicken pieces and perfectly cooked potatoes. This is Thai Food!!! (Rice Sold Separately) **There are no peanuts in this dish, I have decided to add them separately in small bags**

Biscuits and Gravy at the table $3.00: Each week we make a fresh batch of biscuits with homemade breakfast sausage and pepper gravy that can be enjoyed fresh at the market. This week I will have cups so that they can be taken to go (Without the mess) if you want….

Cobb Salad $7: In the mood for a crisp and refreshing salad to start the week? This salad just takes the cake. Chicken, tomatoes, bacon, bleu cheese, eggs, onions. A mix of 4 varieties of hydroponically grown lettuce and a house crafted original cob salad dressing… This is a fresh salad and will be good for a couple days in the refrigerator.
