[News Boquete] Mexican, Cajun, Greek, Indian, Italian... What's for Dinner?

 

 

This past week I had a chance to head over to the Tuesday market to pick up a few things and I was so delighted to see so many new faces.  A great big WELCOME to everyone who is new in town, this is truly a great place to live.  If you are not already familiar with who we are let me explain.  2 Guys & A Cooler is a family run business that specializes in prepared meals.  We started our business 14 years ago and have been joyfully serving the Chiriquรญ highlands ever since.  This week Cecelia and I celebrated our 25th wedding anniversary and we took some time to reminisce about the wonderful memories we've created, one being the very first time we ever attended the Tuesday market as a vendor.  This was back when Mort from Morton's Bakery was the only other vendor selling food and we were introducing ourselves with Chicago Deep Dish Pizzas, organic greens from our garden,  and 12 different flavors of our New York Bagels.  Those were wild times. 

 

Since then, we've focused our energy on creating a truly unique and exotic eating experience and while I am thrilled that there are more dining options today than ever before, let me just very quickly highlight why you might want to consider 2 Guys & A Cooler for your next prepared meal.

 

  1. Experience:  Our family has dedicated the past 14 years to perfecting the "Freezer Meal".  Our meals are crafted for the specific purpose of "Freezer Meal Dining".  This means that our cooking technique and our seasoning profiles have all been adapted to create a dining experience that doesn't seem like your reheating leftovers but rather enjoying a freshly cooked home-made meal.
  2. Value:  Eating great food doesn't have to break the bank.  Our menu offers the widest selection of entrees from all over the world at prices that are impossible to beat.  Many of our customers rave about how huge our portions are and how most of our meals can feed 2 adults and some meals can even 3-4.  This means that you can enjoy one of our delicious meals for only $3 - $5 dollars per person.  Now, with that being said if you're a 25-year-old with a voracious appetite, then one of our meals could run you $7 - $10 dollars.  Either way, it's the best value around.
  3. Quality:  We source the highest quality ingredients that we can find to prepare our meals.  After all, the dinners on our menu are the same dinners we eat as well.  Organic greens, 100% grass fed beef, butter from 100% grass fed cows, you get the idea.  We believe that great food starts with great ingredients.
  4. Diversity:  We love international food.  Chinese, Russian, Thai, Indian, Cajun, Polish you name it.  What we don't love is when all those different dishes taste the same.  Our spice cabinet consists of more than 100 spices brought in from all over the world so that each dish has its own signature flavor.  Ingredients as small as utilizing the Kaffir lime in our Thai dishes, the beautiful Calabrian Peppers from Southern Italy in our Lasagna, or the unique spices imported from India to make our signature Chicken Tikka Masala; we want each dish to stand on its own.
  5. Transparency:  There is nothing more disappointing than seeing an image on a website and ordering that food only to find out that your dinner looks nothing like the picture shown.  Those are fast food tactics๐Ÿคฎ.  At 2 Guys & A Cooler you get what you see.  I personally take a dish out after it has been frozen, I heat it (just like you would), put it on a plate, then I snap a picture.  While I am not a professional photographer, I want the images on my site to accurately reflect the dinners that you will be enjoying.  It's the very least that we can do๐Ÿ˜‰

For now, let's talk about some of the incredible options available this week and if you like sausage be sure to read to the end as I've got some pretty wild sausages on the menu this week!!


For starters we have our Deluxe & Creamy Mac and Cheese.  Our Mac & Cheese stands in a category on its own as we utilize 4 different cheeses brought together in a butter roux and heavy cream.  We then season our sauce very simply and toss it with tender macaroni noodles.  Each plate has over a pound of our Deluxe & Creamy Mac & Cheese and is topped with our parmesan butter infused panko bread crumbs.  Here's where things get interesting.  We know that everyone enjoys their mac a little different so we prepared our dish 2 ways.  The first way is in a tin that you bake.  This delivers a casserole style mac & cheese with a crispy crunchy top.  The second way that we've prepared this dish is in a Vacuum bag.  The bag version of our Mac does not have a parmesan butter crust and the noodles were prepared differently.  The end result is a Mac & Cheese that's ULTRA creamy.  2 completely different ways to enjoy the same dish.  Either way, you get over a pound of Mac & Cheese per serving.

 

 

 

Have you ever eaten Greek Moussaka?  You are in for a treat.  We've prepared this 100% beef dish that brings all of those beautiful Mediterranean flavors to your door step.  Greek Moussaka is an eggplant dish that is layered similar to a lasagna.  We take our roasted eggplant and begin to create layers of parmesan cheese, meat, more eggplant, a beautiful bechamel, and topped with more parmesan cheese and nutmeg.  This exotic dinner weighs in at over 2 pounds and is a LOT of food.  A wonderful break from the ordinary.

 

 

When was the last time you had authentic Cajun food?  This week I've made our Cajun Chicken and Andouille Sausage Gumbo.  Growing up in South Louisiana, gumbo was a dish that we would eat just about every week.  This is Cajun comfort food.  Our gumbo delivers the most authentic Cajun eating experience in the Highlands.  I've been making gumbo for over 25 years perfecting the recipe and drawing on the incredible flavors derived from a medium dark rough, and expertly seasoned with just the right amount of heat.  Serve with freshly steamed rice and enjoy!!  When we make this, we like to top it with either Cajun potato salad or we will boil a few eggs and toss them into the gumbo liquid while it's heating up.  Gumbo flavored eggs, YUM!! 

 

 

In the mood for a little Mexican.  This week we have brought back our hearty Mexican Tortilla Soup.  This chicken soup was inspired by my "Abuelita" in Monterrey, Mexico.  Growing up, we would vacation each year in Monterrey (often staying for 2-3 months at a time) and during that time I would find myself in the kitchen watching and learning as my mother and her mom cooked and cooked and cooked.  Tamales, chili relleno, menudo, barbacoa, you name it.  Our Mexican Tortilla Soup honors the traditional methods my Abuelita would use which embodies the heart of Mexican cooking.  In our soup we use roasted sweet corn, roasted red bell peppers, sauteed onions, garlic, and zucchini.  This is all tossed with tender white meat chicken, perfectly cooked black beans, our house crafted Mexican tomato salsa, and stewed tomatoes in a chicken stock.   Simple, flavorful, and utterly delicious.  This soup can feed 1-2 adults and comes with a free bag of fresh corn tortilla chips to garnish your soup with.  After all it's called tortilla soup๐Ÿ˜

 

 

 

Have you ever eaten at Panera bread?  From time-to-time Cecelia and I would frequent Panera bread to enjoy a delicious creamy cheddar broccoli soup served in a sourdough bowl with a turkey Swiss arugula sandwich on the side.  When I wrote the recipe for our Cheddar Broccoli soup I wanted to use the Panera Bread experience as my motivation.  This week we have that very soup on our menu again.  Our Cheddar Broccoli soup takes this soup to a different level and the secret behind our soup comes down to the techniques we use to prepare it.  We start by roasting the carrots and cooking the broccoli very flavorful stock.  Next, we prepare our cheese sauce, and how me make our sauce is what sets our Broccoli Soup apart from all others.  Our cheese sauce is made with sharp cheddar cheese melted in a beautiful butter roux and heavy cream.  Have you ever eaten a cheddar broccoli soup that has a "grainy" texture and the cheese sauce splits when reheated?  Not here.  Our sauce is incredibly smooth with a velvety texture that heats perfectly in your home and while we don't make the sourdough bowls, a nice piece of crusty sourdough bread from one of our local bakeries will certainly do the trick.  Each portion can feed 1-2 adults.

 

 

Do you miss the classic American Breakfast sausage, or any sausage for that matter?  You are in luck.  We have taken the art of sausage making to a completely different place (can anyone say Abe Froman ๐Ÿ˜‚).  This week we have our delicious breakfast sausage available (both spicy and mild) and I'll be showcasing a few specialty sausages that I made as well.  Sausages like the Chicken & Sausage Gumbo Sausage, or the South African Cheese Griller.  Every heard of the Cincinnati Who Dey Sausage or better yet the Pot Sticker Sausage?  What about the Smoked Whiskey Bacon Sausage or the Pumpkin Spice Sausage, a sausage that will literally have your entire kitchen smelling like a freshly baked Pumpkin Pie!    Check the sausage section on our menu to see what we have available; they tend to go quick.
