[News Boquete] 2 Guys & a Cooler have a line up for you


Good Morning Everyone,

 

 

Hope everyone enjoyed the festivities this past week.  We really took advantage of our week off from the market.  Hoping to relax with some time off but all my Honey Do’s kept us super busy.  We were able to install a nice new grease trap, we cleaned out the drain field (as it was previously used as a garbage pit by past tenants….  Yuck!!).  We installed screens on all the windows of the house as well as built 2 screen doors for the front and the back of the house!!  Now we have amazing air flow and tons of beautiful natural light…   Earlier this week be bought a really great 7000watt generator for our refrigeration equipment (just in case we lose power).  After it was all said and done the time flew by and this week is now upon us. 

 

Just wanted to extend a thank you to all those who recently inquired about having us come and personally cook at your party this year.  We are officially completely booked up till the end of January..  Thanks so much.  Chandler and I are looking forward to a busy 12 weeks!!

 

We are so glad to be back in the kitchen this week.  We have some yummy bites available for you this week.  2 weeks ago we started taking pre-orders on items that sold out super fast so this week will have some Boquete Favorites back on the menu. 

 

Cecelia and I took some time to relax by mushroom hunting and I have to admit she has a knack for finding Porcini Mushrooms!!  I on the other hand found a beautiful patch of Chanterelles.  If you are hunting mushrooms there’s about 3 weeks remaining in the season.   Good luck and don’t eat them unless you are 100% positive it’s edible.  We have a few wonderful entrees made specifically centered around these amazing gourmet mushrooms.  Check out our Mushroom Soup this week as well as our Chanterelle and Sage Chicken dish.

 

 

 

 

This week I’ll have a few items from our garden that will be available.  We have a 3 Dragon fruit starters (Pic on the bottom left of the fruit).  If you’ve ever had a dragon fruit you know how awesome they are.  Not only do they produce a beautiful 24 inch flower that blooms throughout the evening but their fruit is considered a super fruit because of their nutritional value.  Oddly enough I was at Super Baru in David on Tuesday and I noticed that they had a small inventory of the Yellow Dragon Fruit Variety.  Here it is called Pitahaya.  It was selling for over $10.50 a kilo (2 Fruits) !!!!  Funny thing is that they always sell out really quick!!  We have all 3 varieties (White, red, and yellow), and hope to have fruit available in the next 6 months.  Currently we only have some starter plants.  Also we have several beautiful raspberry plants starts.  These raspberry plants yield amazing ruby red raspberry and will give you fruit in 6 months or sooner!! Can be grown in a large container if necessary!!  (picture of the fruit on the right)

Entrees:

 

Chanterelle Sage Chicken Casserole  $9.00:  You have asked and asked and it is back this week.  This dish is so awesome but because of the seasonal nature of the mushrooms that are in it we can only offer this chicken dish when nature offers us fresh Chanterelle and Porcini mushrooms.  This is a lightly floured piece of chicken breast that’s been pan fried and slow cooked in a Chanterelle, crimini, button, and porcini mushroom white wine sauce.  Feeds 2 adults and is served over brown rice.  A real treat!!

 

Shrimp Etoufee  $9.00:  The Etoufee is back and better than ever.  There are 2 main components in this dish Butter and Shrimp.  Both of which have jumped in price recently. Nonetheless we have made sure that every order of etoufee has sufficient shrimp for 2 portions.  No hunting required!!  This Cajun staple is full of fresh herbs and spices that give it a unique taste.  Best if served over a bed of warm rice.  (Rice $1.00 a bag) Let me know if you need some.  The best part about this dish is that you get the first cook on the shrimp.  I added them at the very end so all you need to do is thaw and cook for 4 minutes.  Perfectly done shrimp!!.

 

Chicken Pot Pie  $10.00:  When you decide to bring back the favorites the Chicken Pot Pie has to be on the menu..  Buttery and flaky crust with a delicious gravy and pot pie mix in the center.  A real treat and a perfect comfort food.  Feeds 2 adults..

 

(GF) Greek Moussaka  $8.00:  When we made this dish a few weeks ago I received many emails asking me to bring it back.  Well, here we go.  Eggplant that’s been pan fried and layered is the base for a delicious Greek style cooked ground beef in tomato sauce and wine that’s been showered with parmesan cheese and layered with more eggplant.  After a few more layers of parmesan cheese we top it all off with a perfect béchamel sauce and a dash of nutmeg… Feeds 2

 

French onion Crispy Chicken  $8.00:  Another crowd please this chicken dish is simply delicious.  Perfectly cooked chicken breast that’s been marinating in a butter, mustard, and Worchester sauce.  All topped with our very own crispy French fried golden onions.  What you end up with is a balanced combination of flavors that completely complement each other.  Unforgettable.  Feeds 2 Adults.  Served over a bed of pasta with roasted red pepper sauce and garlic parmesan.

 

Chicken Cordon Bleu $9.00:  Always a top seller this dish is a classic.  Tender and juicy white chicken breast pounded and rolled in gourmet Swiss cheese and Smoked ham.  Served with a side of steamed broccoli and carrots and covered in a smoked gouda mornay sauce.  Feeds 2

 

Chicken Divan $8.00:  This comfort food is simple and tasty.  Blanched broccoli, grilled chicken, and finally a creamy cheddar, wine, sour cream, and mushroom sauce top it all off.  Covered with a sprinkle of parmesan cheese bread crumbs.  Moist chicken, tender broccoli, and a mushroom layer that will bring delight to your taste buds..  feeds 2

 

Gnocchi Bolognese $7.00:  New and improved.  This Italian dish is cooked up with nice and firm gnocchi pasta (potato Pasta).  Cooked in a wine reduction meat sauce this pasta dish is quite tasty.  Mozzarella cheese, black olives, and parmesan cheese top it all off.  Feeds 2

 

(GF) Chicken Tikka Masala $8.00:  In the mood for some Indian food?  This classic Indian dish is loaded with exotic flavors!  First we marinate white chicken breast in a yogurt spice sauce.  After a day or so we then grill them and toss the chicken pieces in a cream based sauce that’s loaded with tomato sauce and exotic Indian seasonings..  Recommended to serve with Jasmine rice or noodles.  Let me know if you need any Jasmine rice (Cooked $1.00 per bag)

 

Chicken Leek, mushroom, and Bacon Casserole  $8.00:  Tender Chicken Thighs cooked in a white wine reduction sauce with crispy bacon, button mushrooms, and fresh leeks (Puerro).  This comfort food simply takes the cake in flavor.  Served with a generous portion of creamed mashed potatoes.  Feeds 2.

 

(V) Eggplant Parmesan  $8.00:  A Great vegetarian dish that is layered with mozzarella, parmesan cheese, and house crafted parmesan sauce with roasted red peppers and sun dried tomatoes..  Enjoy eggplant that is breaded and cooked perfectly for a velvety experience.  Feeds 2

 

(V) Veggie Burgers  $2.00 each:  a delightful alternative to a meat patty, this burger has it all.  An array of beans (Black, white, garbanzo), oats, leeks, artichokes, red pepper, garlic, fresh herbs, jalapenos, artichokes, red onions, olives, exotic spices like cumin, Hungarian paprika and much more!!!  Loads of flavor and will you up.  Each patty weight in at over a quarter pound so this vegetarian burger is a meal for the hungry!!  Split into 2 for a lighter lunch or dinner.   Great when pan fried in some olive oil on a skillet then placed on a bun.  Serve with lettuce, red onions, salsa, light sour cream, and some fresh peppers for a delicious zippy veggie burger.    

 

 

 

Soups

Cream of Mushroom Soup  $10.00:  2 weeks ago we sold out really quick and started a pre-order list for this week.  I am pleased to announce that this Cream soup is probably the most exotic mushroom soup to date!!!  Utilizing nature’s fines fungus we have put together a Cream soup like no other.  Over 8 pounds of mushrooms went into this dish as we carefully picked a delicate balance between Portobello, Crimini, Button, Chanterelle, Porcini, and Oyster mushrooms!!!  We only used fresh mushrooms for this dish as each mushroom brings its own unique flavor and balance to every bite.   As we are rounding down the mushroom season we had to take advantage of a few last minute mushroom expeditions which proved to be quite bountiful.  Serves 2 adults (32 oz).

(V) Mexican Cornbread  $6.00:  Homemade cornbread with jalapenos, corn, red bell peppers, cheddar cheese, and black olives.  Medium .spicy and completely delicious!!

Cobb Salad  $7.00:  A great salad that’s loaded with ingredients and flavor.  Delicious grilled chicken breasts, bacon, bleu cheese, onions, tomatoes, eggs, and a homemade Cobb dressing on the side..  Will keep for a couple of days as this product is made just prior to the market.
