Great Morning,

We have seen a lot of new faces in town over the last few weeks.  If you've finally made it home let me bid you a warm welcome!!  We have so many wonderful things to talk about.

We are 2 Guys & A Cooler.  Our family run business dedicates itself to providing a service that makes your life just a little bit easier here in Panama.  We dedicate our time in the kitchen creating prepared meals that are easy to reheat and delicious.  We try to use all local ingredients to bring to you a  taste of home.  All of our meals come frozen and are ready for you to re-heat at any time.  All you need is a toaster over and you are in business.  30 minutes later and you are having delicious meals like chicken pot pie, Chicken Cordon Bleu, Italian Lasagna, Penang Curry, Tika Masala, Buttermilk Biscuits, Fresh French bread, Gumbo and much more.  Our meals are diverse in style and in flavor.  We utilize over 100  herbs and spices to ensure that each dish maintains its own unique authentic flavor. 

With the Jazz Festival upon us, if you don't have time to cook for yourself and don't want to go through the hassle of eating out then give us a try.  Each week we publish a full blown menu to a dedicated client list.  From that menu customers can pre-order their meal and pick it up at the BCP on Tuesday mornings.  If you would like to be added to our list please send me an email requesting to be added and if you are new in town come by my booth on Tuesday at the BCP to say Hello…  My name is Eric.

Last week we offered hot breakfast for the first time.  Homemade southern biscuits with fresh country sausage pepper gravy.  I must say thank you as the response was overwhelming.  We brought to the market 60 freshly baked biscuits and a crock pot full of gravy and after it was all said and done we were left with none.  The emails have been coming in and we are encouraged to know that they were so well received.  Here are a few testimonials:

 With last week success we have decided to do it again but step it up a bit.  We will have breakfast (biscuits and gravy) and we will serve early lunch.  We will have authentic Chicago Italian Beef with Giardiniera.  My time in Chicago allowed me to absorb the rich food culture.  One of my very favorite food products that Chicago offers is the Italian Beef Sandwich.  A truly wonderful experience that will be made fresh for the market.  We bake the bread that we will be using and prepare the beef and have it all ready for you to assemble fresh.. Topped with a spicy blend of pickled veggies.  This sandwich is ridiculous.

 

Also We will have Sushi this week.  I will be offering 3 types of rolls for pick up on Tuesday.  We will have Andouille Sausage Gumbo and Mexican tortilla soup available this week as well as Panini's.

We are bringing back Beef and Broccoli, Breakfast Casserole, Lasagna, Chicken Divan, and a new item Italian Chicken Marsala.  Our scones this week are blueberry and lemon zest.

Sausage:

(GF) Spicy Breakfast Sausage  $6.00 1#: (Only 3 Available)  This week the Breakfast sausage is a bit spicy.  We've had many requests to kick up the heat so here we go.  It's not out of control hot but has a respectable bite to it.  Lots of fresh sage and other herbs mixed with clove and brown sugar.  So Good.  Perfect for white sausage gravy and biscuits.

(GF) Italian Sausage  $6.00 1#:  Upon request I have made this great sausage again.  I Will have this sausage available in 1# bags.  Mild/medium spicy and great for your spaghetti, lasagna, or anything that you want to add a bang of awesome flavor to.. SOLD OUT

 

Sushi: (All sushi rolls are served with pickled ginger and Wasabi paste)

California Roll $6.00:  Enjoy this roll with crab meat, avocado, and cucumber

Philly Roll $6.00:  A great roll.  Cream cheese rolled tight with salmon and cucumber.  A great combination.

Spicy Tuna Roll $6.00:  This roll is spicy and uses ultra fresh tuna blended with chopped jalapenos and cayenne.  Mixed in a wonderful and flavorful Dynamite Sauce.

 

Breakfast:

Breakfast Casserole  $8.00:  Ready for this one!!  We were asked to bring a breakfast menu item to the table this week!!  So here it is.  Our fresh made breakfast sausage that's been crumbled and spread over perfectly scrambled eggs seasoned with a touch of salt, pepper, and a few other special spices is all mixed with cheddar cheese and topped with our home made southern buttermilk biscuits.  You get the first cook on this item as it is prepared raw then frozen.  The outcome is fresh biscuits, eggs, cheese, and sausage all in a casserole.  So ridiculous and scrumptious!!   Feeds 2 Adults!!   

 

 Panini's:

Italian Panini  $5.00:  This tasty Panini has been a favorite from the beginning.  Fresh Mozzarella cheese, pepperoni, smoked ham, and pastrami make up this delicious sandwich.  We brush the outsides with a delicious roasted garlic infused olive oil for that crispy Panini experience..

  

Entrée's:

(GF)Chinese Beef & Broccoli  $8.00:  This classic take out dish is available this week with bold authentic flavors.  Crisp broccoli and tender beef stir-fried in a sweet/spicy sauce that has all the Asian Flavors.  Ginger, garlic, soy sauce, sesame oil, srirachi, brown sugar and much more.  Feeds 2 and works best over a bed of Jasmine rice.  (Rice sold separately).

 Broccoli and Chicken Divan (Casserole)  $8:  A crowd pleaser.  This wonderful casserole is full of flavor.  Chicken cubes and broccoli make up this dish as it is layered with cheddar cheese a bread crumb topping, and a delicious gravy that is made up of white wine, sour cream, and mushroom soup.  Feeds 2

Italian Chicken Marsala  $9.00: great Italian chicken dish that is loaded with complex flavors.  Made with dry Marsala wine and fresh crimini mushrooms this dish is rich and delicious.  Chicken thighs are pan fried and allowed to braise in and our marsala sauce till tender.  Tossed with crimini mushrooms and served over a bed of rotini pasta this entrée is a wonderful break from the ordinary..

Shrimp Etoufee $9.00:  The Etoufee is back!!.  There are 2 main components in this dish Butter and Shrimp.  In the right order you get a creative dish that has celery, bell pepper, onion, tomatoes, shrimp stock and fresh shrimp.  This Cajun staple is full of fresh herbs and spices that give it a unique taste.  Rich and thick this tomato based sauce coats all the ingredients.   Best if served over a bed of warm rice. Let me know if you need some.  The best part about this dish is that you get the first cook on the shrimp.  I added them at the very end so all you need to do is thaw and cook for 4 minutes.  Perfectly done shrimp!!.  Feeds 2 Medium/Spicy

(V) Eggplant Parmesan  $8.00:  Enjoy this eggplant vegetarian dish as it comes with loads of mozzarella and parmesan cheese and breaded eggplant buns layered with our delicious homemade eggplant parmesan sauce.  This sauce is so flavorful and delicious that it pairs perfectly with this dish..  Feeds 2 Adults

Mexican Rigatoni $8.00Enjoy a south of the border creation that blends flavors from the old country with spices from Latin America.  Black beans and corn pop with flavor as they are mixed with cheddar and  all tossed in a ground beef mixture. Mexican salsa, oregano, cumin and cilantro is then added to the mix as it is tossed with rigatoni pasta.  Topped with sliced Roma tomatoes this is a real treat for 2 adults.  

Chicken Leek and Mushroom Casserole $9.00:   We sold completely out last time we offered and left a few clients with empty hands..  This week we will make a fresh batch. Tender Chicken Thighs cooked in a white wine reduction sauce with crispy bacon, button mushrooms, and fresh leeks (Puerro).  This comfort food simply takes the cake in flavor.  Served with a generous portion of creamed mashed potatoes.  Now with more mushrooms, bacon, leeks and chicken!!  Feeds 2.

Chicken Cordon Bleu  $9.00:  This classis dish is back this week.  Tender and juicy chicken breast wrapped with smoked ham and gourmet Swiss cheese.  Breaded then baked this dish is superb.  Served with steamed cauliflower, broccoli, and carrots then topped with a smoked gouda mornay sauce.  Feeds 2 adults.

Sausage and Potato Casserole  $8.00:  This Comfort food is simple and delicious.  We sold out last week and had some request to make it again so here we are..  Now with more of everything!!  Cheese, sausage, potatoes, carrots and peas.  Blanched, boiled, roasted, and creamed this simple dish uses many different styles of cooking but the end result is always the same.  Delicious  Feeds 2 Adults.

(GF) Chicken Tikka  $8.00:  This classic Indian dish is loaded with exotic flavors!  First we marinate white chicken breast in a yogurt spice sauce.  After a day we then grill them and toss the chicken pieces in a tomato and cream based sauce that's loaded with jalapeno peppers and exotic Indian seasonings..  Recommended to serve with Jasmine rice or noodles.  Let me know if you need any Jasmine rice (Rice Sold Separately)

Filet Mignon Beef Stroganoff  $9.00:  A classic comfort food.  This dish is rich and creamy.  Tender beef in a sour cream sauce and loaded with fresh button mushrooms and slivered onions..  This dish has it's authentic flavor because of how we prepare the beef stock and slow cook the Filet. Feeds 2.   (Egg noodles included.)

Italian Lasagna with fresh baked French bread  $9.00:  As we sold out of this item last week we made a fresh batch so the Lasagna is back this week by overwhelming popular demand.  A great combination of sweet Italian sausage and ground beef this lasagna uses nothing but the freshest ingredients.  Ricotta, parsley, our very own house crafted lasagna sauce that is simply loaded with fresh veggies and bursting with flavor.  I have increased the amount of noodles and layers to hold up better when you serve it so that it stands on its own.  Comes with a pre-kneaded dough ball that bakes while the lasagna bakes to deliver a fresh piece of French bread with your meal.  Feeds 2

Baked Spaghetti  $7.00:  This entrée is a meal and a half.  Easily feeds 2 adults and is a combination of Monterrey Jack, Mozzarella, and Cheddar Cheese mixed with our home-made pasta sauce and meat sauce.  Utilizing real house crafted Italian sausage and beautiful ground beef you will get several layers of delicious pasta, cheese, meat and sauce. Served with our signature "Ready Bake French Bread Rolls".   Bake and enjoy.

(V) Veggie Burgers  $2.00 each:  A delightful alternative to a meat patty, this burger has it all.  An array of beans (Black, white, garbanzo), oats, leeks, artichokes, red pepper, garlic, fresh herbs, jalapenos, artichokes, red onions, olives, exotic spices like cumin, Hungarian paprika and much more!!!  Loads of flavor and will pep you up.  Each patty weighs  in at over a quarter pound so this vegetarian burger is a meal for the hungry!!  Split into 2 for a lighter lunch or dinner.   Great when pan fried in some olive oil on a skillet then placed on a bun.  Serve with lettuce, red onions, salsa, light sour cream, and some fresh peppers for a delicious zippy veggie burger.   

  

Soups:

Cajun Andouille Sausage and Chicken Gumbo $8.00:  Enjoy this delicious staple from the bayou.  We start off by making a flavorful roux and then adding all of the veggies and  andouille sausage.  After a slow cook we toss in a combination of white and dark chicken meat and voila.  There you have it.  Tender and juicy chicken with caramelized sausage that is Cajun comfort food to the core.  Perfect in every way.  Medium spicy.  Simply heat and serve.  Serves 2 and is best over rice.  Eat with saltine crackers on the side.

Mexican Tortilla Soup  $8.00:  This Boquete favorite is a personal favorite as well!  Spicy and rich this hearty tomato based Mexican soup has it all.  Comes with fried crispy tortilla chips (for garnish) has loads of tender and succulent chicken meat, and tons of fresh veggies like tomatoes, onions, zucchini, black beans, corn, roasted red pepper, and more.  Seasoned with chipotle peppers, oregano, cumin and more this well balanced soup is as authentic as it comes.  Just like Abuelita used to make.  All you have to do is add a dollop of sour cream with a pinch of cheddar cheese.  A great soup that will not disappoint!

 

 Salad:

Cobb Salad  $7.00:  In the mood for a crisp and refreshing salad to start the New Year off?  This salad just takes the cake.  Chicken, tomatoes, bacon, bleu cheese, eggs, onions.  A mix of 4 varieties of hydroponically grown lettuce and a house crafted original cob salad dressing… 

  

Coffee:

This wonderful coffee is available in ground or whole bean and in 2 roasts.

Smooth (medium).. Roasted to showcase the Subtle notes and nuances that have made Boquete coffees some of the most sought after in the world.  Sweet and complex with a fruity hint this coffee is delicious to drink black at any temperature.  Panama Joes Medium Roast has a nice balance of  acidity and fullness.    

Bold (dark).. Roasted dark for those who prefer that deep intense flavor in a full bodied coffee.

Southern Buttermilk Biscuits  $1.00:  This breakfast product has caused ripples in the space/time continuum from what I've been told.  An awesome spectacle of flour, butter, and artistry come together in a delicious buttery and flakey treat.  Each biscuit rises tall and is huge.  Every biscuit is enough for 1 or 2 adults.  Each biscuit is formed then frozen.  So you get the first bake!!  Fresh and unlike any biscuits in Panama.    

Banana Walnut    $5.00:  A great market Classic.  Sells out every time.  Moist and delicious full of perfectly ripe bananas and topped with walnuts.

Pumpkin Spice Bread  $5.00: A superb combination of delicious spices make this bread quite tasty.  Utilizing fresh pumpkin we roast then cream it.  A few extra ingredients (Clove, Cinnamon, nutmeg, ….) later… Voila!  Moist, flavorful, and perfect anytime.
