Our largest cacao harvest yet, and why Chocolate Club begins with the farm.
Hello friends,
Fresh chocolate has a season, just like mangoes, avocados, and tomatoes.
That may sound unusual in a world where chocolate is expected to look and taste the same all year long.
At Quetzal Cacao, the chocolate begins with the farm.
We grow, harvest, ferment, dry, roast, and craft our cacao here on our estate in Chiriquí. Each collection is shaped by the harvest, the season, and the ingredients that are ready to be shared.
Newsroom Panama recently told the story of why we make chocolate this way, following the rhythm of the farm rather than a factory schedule.
And this week, that story moved forward again.
Last week, we gathered the largest cacao harvest our farm has given us so far. More than 200 cacao fruit came in, nearly twice our usual harvest. |

The beans are fermenting now.
When I turned them, the fruity vinegar scent of a healthy fermentation rose from the box, and the heat of the beans warmed my hands.
It felt like the farm had crossed another threshold.
This cacao still has a long way to go before it becomes chocolate. It needs time, tasting, and careful attention.
That same attention to harvest, time, and tasting shapes every Chocolate Club season.
Quetzal’s Chocolate Club is a personalized, seasonal chocolate membership made from our own estate-grown cacao.
Each collection includes four handcrafted chocolate bars, prepared with the season and the member’s chocolate profile in mind.
Before I craft a collection, I return to each profile. I consider cacao percentage, dairy needs, nut allergies, and the flavors each person especially enjoys.
One longtime member recently opened her July collection and wrote:
“This box was made specifically for me.”
That is the kind of care I hope every member feels.
The next Chocolate Club season will open first to the guest book on July 24.
