Hi Everyone,

Wow what a wonderful week it has been!! With all the rain, my black and white tomatoes have started to grow. I am getting excited about all the vegetables that I will have in the future, imagine a black and white tomato salad with purple basil and white strawberry vinaigrette. The ideas for all these unusual items just keep coming. Thank you for the great gardening tips, I really appreciate all your help in this area.  Who would've ever though that slugs love to drink beer!!!  Interesting.

I have discovered a very unusual flower that some of you have tried in our "Chefs Table experience." These flowers taste a little bit like grass, but there effect is unimaginable, your mouth goes a little numb, then you get a electrical feeling, followed by a extra acute sense of taste. At the special dinners, I have the guest eat half of their course, and then eat the flower following the rest of the course and the flavors change and are enhanced, it's one of God's great wonderful plants.

Upcoming Events:

Fathers Day June 21st  (11am till 4pm) at Sabor is approaching and I am very excited about this very special treat we have in store for "Dad!" We have imported 3 different cuts of the most beautifully marbled pieces of beef. We have selected a 12oz Kansas City Strip steak, a 6 oz petite Filet of beef and my personal favorite a 12 oz flank steak or "Entrana" as they call it here. We have selected coffee wood and orange tree woods to use in correlation with charcoal to add that nice smokey flavor to our meats! You can "Build your own" steak choosing from creamy blue cheese and bacon topping, fresh assortment of mushrooms and green leafy spinach, or a classic crab cake with a creamy butter sauce. These will come with one of our awesome side items, and you can add a all you care to eat Salad bar with this experience. Fresh leafy greens, garden fresh vegetables from our magnificent gardens.  Choose from our scratch made dressings, creamy cucumber and garlic, tree tomato vinaigrette, or classic balsalmic vinaigrette to freshen up your experience. Monday June 22nd   (5pm till 9pm) at Chiriqui farms – There has been a lot of request in the area for some good sushi. We have found a wonderful Sushi chef that was trained by a Japenese Master Sushi chef to perfect his technique and Sushi rice. There will be 4 different rolls to choose from, Vegetarian, Crunchy Chicken, Crunchy Shrimp and my personal favorite The tuna explosion roll, this awesome roll has the freshest tuna and salmon with ripe avocado and tangy cream cheese. Chef douglas makes his own Wasabi, ginger and soy sauce from scratch for a truly unique experience. I was trying to be cool so I ate a big ball of his wasabi, which normally isn't that bad, but his, WOW!! I know that not everyone loves sushi, but everyone loves Pizza. We have garden fresh scratch made tomato sauce, thin crispy dough and the freshest toppings to get that perfect thin crust pizza experience. I know what you're thinking, there is as many pizza options as there is coffee options in this town, however this pizza is truly one of a kind. Make a reservation or walk in for this different event. You have asked for this and here it is! Call Rick for a reservation at 6290.7382 or walk on in!!  The cost is $14+ tax.  for sushi and $10 buck for a Pizza Pie.

Sunday June 28th at Sabor - We have a truly different event for you! Live music from Soulfire Project, this group of young men have a very interesting project, they are traveling Central America, teaching indigenous how to live on sustainable clean energy. They travel around and live in a school bus, which has been converted to run off restaurants dirty deep fryer oil. They support themselves by sharing there truly unique music and selling very cool things made from recycled scraps. We will have a Jerked chicken, coconut rice and sweet plantains for $12 and a free mimosa at the door. I have located a very interesting product that the Jamaicans' say is key to a good jerk seasoning, they call it "Pimienta" it looks like a over sized black peppercorn, with flavors of clove and pepper balanced with a nice sweetness, this is the first time we have come across this product, but it's truly cool. For reservations Call Sabor direct at 720.2454 ext 302 or call me direct at 6766.3393. We look forward to seeing you here.

Breakfast in Boquete  seems to be the thing for everyone to get together, have coffee and get there day started with something good and fun to eat. This got me thinking, one of my all time favorite dishes is country fried steak and eggs. As no one has this dish, we started playing with this and have finally perfected this wonderful dish!  At Chiriqui Farms across from Brisas in Alto Boquete you can find a very different breakfast for the area. The breakfast menu has biscuits and gravycountry fried steak with sausage gravychocolate Belgium waffles, and a few more classic American breakfast staples. You can get a awesome breakfast with a endless cup of coffee from $5 to $7, the country fried steak is even big enough to share! All ingredients' are from the farm fresh! Project Joshua is 2 weeks away and wow, I can't tell you how incredible it has been to see the community coming together and offering donations for the silent auction and going above and beyond to help this young man and his family. I want to specifically talk about Milly at Millys chic Beauty Shop, not only have they donated all of their services , but they have taken it upon themselves to get the government involved in getting the mother aid from the government. The event will have a 4 string quartet, 3 course meal which starts out with a flower salad, main course is choice of Grilled chicken breast with garlic cream sauce or seared tuna with pineapple salsa and for dessert a banana s foster with gelato. The event will kick off at6:00pm. This Event is reservation only, the tickets are going fast, If you would like to come out and support this event please RSVP by email to bill.mcabee@gmail.com There will be a silent auction with many products donated by the community. One member of the community is taking the mother and grandmother along with Joshua to Sabor Sunday June 21st to treat her to a imported steak. When I learned about this I broke down a little bit, just thinking about the struggles and trials this mother has gone through the last 14 years with all of her time going to care for her young disabled son. I do not think she has ever had such a piece of imported beef like this, and what a special treat for her! We have a lot of truly magnificent people in our community with big hearts of giving. It really is so nice to be able to be a part of this project!

Best regards,

Chef Chris
