[News Boquete] New Culinary Weekly Newsletter


Hi Everyone,

 

I hope all is well. I have now hit the five year mark here in my Panamanian journey, and have decided to start a  weekly update all about my life as a chef here in panama!

 

These weekly newsletter will be all about food, cool new recipes, Panama mishaps, awesome updates, Events, interesting ingredients I have come across and what to do with them.

 

For such a relaxed environment, I find that life moves at an incredible pace here in Boquete.  It seems that getting residency can take up to a year but increasing traffic fines can happen over night!!  Some of you may know that the driving laws (although they haven't changed) now come with an elevated fine.  Whatever you do, DO  NOT talk on your cell phone and drive at the same time.  I don't think that I am emotionally ready to talk about my situation but let me say this.  Man the fines hurt!! 

 

 

I am currently the Executive Chef at Valle Escondido Resort Golf and Spa , located in Boquete Panama. My training as a chef extends beyond traditional cooking styles & techniques.  My specialty is taking specific flavor combinations and bringing them to you in such a way that your brain processes what seems like an ordinary meal in an extraordinary way.  I believe that food should be romantic, nostalgic, creative, daring, innovative, and most of all fun.  I will be pushing my limits as a chef to serve you the best dining experience that I can.

 

In addition to cooking I have also picked up gardening.  A hobby that many seem to enjoy in the Highlands.  Quite honestly I could use some tips.  Slugs and caterpillars are driving me crazy!!  I have planted some very cool vegetables and look forward to adding some really special plates with some very exotic ingredients to our menu.  A few of the seeds that I have planted are Black tomatoes, Purple potatoes, White Strawberries, Purple Carrots, and pink spinach. I also have 9 different varieties of edible flowers which I have been making a "Flower Salad" out of.  Quite a delicious way to enjoy nature's beauty. 

 

I will also be writing a bit about the Program I am involved in called "Lavida Optimal Wellness" As the chef for this international program I create special meal plans for each guest depending on their dietary needs and goals on what they hope to achieve in this 7 day wellness program.  This is a custom tailored program that takes advantage of my skills in the culinary world to help you achieve your dietary goals.  Feeling Better, Eating Healthier, and Living Right. 

 

Finally I am planning a monthly charity event to raise money for various people in our community that are in need and fall outside the reach of local organizations.  This is where I could use your help.  We currently have several families that we are planning an event for but if you know someone that is in desperate need of some help please send me an email with their names, their specific needs, and their story.  Our team will read every email to carefully select our next recipient.  There have been times throughout my life where it seemed as if all hope was lost and through the kindness of a stranger I found strength to continue.  I have been blessed.  Now I finally get the chance to pay it forward.  To give that which makes so much of a difference in the lives of the desperate.  Hope.

 

 

July 1st is a very important day.  On July 1st we are hosting an event for Joshua.  Joshua is a 14 year old teenage boy.  Instead of playing soccer and hanging out with friends Joshua is confined to a chair.  His stomach does not process food like the rest of us and as a result his mother spends most of her money buying a special Pedia-Lite drink for him to drink through a straw.  He weighs 35 pounds.  He lives in an unfinished house with his mother as she can't afford to do the repairs necessary to have proper living conditions for her and her son.  This event on the 1st of July will be for Joshua. We will be donating $10 from every plate to this young man's charity.  Although they have many needs our focus with this event is to raise enough for his mother to purchase a special wheel chair for him.  If we raise more than expected we look to help buy some materials necessary to help finish their home.
