Literally, tapas are tops or covers. No one is quite certain how or why tapas came to be such a popular food style in Spain. One very pedestrian explanation is that the original tapas were nothing more than slices of bread placed over the wine cups to keep the flies out. I prefer the story that says a bartender in Madrid (or was it Barcelona?) got tired of soldiers getting smashed drunk and starting fights in his establishment. He thought if perhaps they would EAT a bit of something along with their swilling, they wouldn't get quite so drunk, quite so fast and he might suffer less damage to his furniture. So, he began making small dishes of food and placing them atop the wine cups for the soldier's consumption. It was an innovation that quickly caught on.
Today, tapas bars can be found throughout the world. Simply, tapas are small dishes of savory foods of Spanish origins (with Moorish and Turkish influences), eaten with gusto as a stand alone light supper or prelude to a more elaborate dinner. ALWAYS accompanied by wine. Best enjoyed with friends.
The Panamonte tapas menu features everything from olives marinated in thyme and orange oil, to braised octopus, to serrano ham and chicken croquettes, papas bravas (roasted potatoes in a spicy aioli sauce—hands down the ubiquitous favorite in Barcelona), garlic shrimps, Asturian bean stew, and more ... an ambitious offering of a dozen delectable taste temptations.
