bulk organic foods

I am preparing to maintain a pantry of bulk organic foods in these categories:  grains, flours, seeds, nuts, oils, spices, and other.  'Other' would be items such as loose green tea, powdered kelp, bentonite clay, diatomaceous earth, organic cleaning products; a list that will develop itself with time.  The stock will not include branded supplements or refrigerated items.  

To get started, I would appreciate hearing what you most want in each of these categories, and if you will want whole bags/jars/cases or partials.  Whole containers are the easiest place to start, but I intend to also keep a stock of each item for sale by the pound.

This information is not an order and does not commit you to any purchase.  I'll ask for that when i have a list of which items are most wanted and can use that list to start filling your needs and stocking the pantry.  After our greatest needs are met, we can start getting more specialty items.
