Like superb wine and premium olive oils, fine chocolates all carry a signature flavor. Wine grapes vary by varietal, region of origin, harvesting methods and weather. So, too, do cacao beans.
Until now, CHOX's chocolate has been crafted with an earthy, deep chocolate bean. However, we recently acquired some cacao that has a much milder, soft chocolate flavor. Using the wine comparison, our traditional chocolate is a fuller bodied Cabernet, while the new bean produces a smoother Merlot.
The chocolate from this new crop is a redder hue than our traditional chocolate, so we are calling it "Panama Red." Because of it lighter taste, we have also increased the cacao content of the Panama Red bar to 70%. This gives our Panama Red bar all of the health benefit of less sugar without increased bitterness.
