The last 2 weeks have been very busy! I have been preparing recipes and food for a detox program for a group coming to Valle Escondido. Creating the perfect menu that tastes good and achieves the goals of the clients was a challenge. Studying health benefits of different ingredients and how they interact with each other was very interesting. Wow! I haven't researched this much since school. I have also been searching for new and interestingly unique fruits, vegetables, and flowers that I can grow here in Boquete and incorporate into new food experiences. One that captured my attention is Rock Chives. They have an awesome flavour and make a beautiful garnish. I love finding the best quality, most unique food items and incorporating it in to my dishes. Another very cool ingredient on the healthy diet spectrum is MACA. Maca root has been used by indigenous Andean societies as a source of nourishment and healing for thousands of years. there are four alkaloids present in Maca known to nourish the endocrine system. It reduces stress by increasing stamina, boosts libido , and combats fatigue. What unique fruit, vegetable, or edible flower have you found? I would love for you to share it with me. September is typically very slow which means I can play catch up. I think I will start with some rest, family time, golf, then maybe cliff jumping off a 15 foot cliff, plunging into a 25 foot deep, mineral rich, mountain river with some friends ;). Did I intrigue any of you to come visit? . "The Dinners for Charity" at Sabor Escondido was birthed a few months ago with the "Joshua Project". The event was explosive, with results that went above and beyond what anyone every dreamed possible. It even moved the government to make a difference in many families across the country. For me this is what culinary life is about, changing peoples lives. It can be used to bring people together, satisfy a hungry soul, heal a broken body, or celebrate a special occasion. Creating food in a busy kitchen, getting it out fast, hot, and plated with excellence is one of my biggest rushes. However this thrill still doesn't even come close to the excitement of knowing the plate that was served eased our guest's tension from their hustled day. Purely awesome to say the least! Even better yet, now take this culinary passion for food to radically change peoples lives by raising money for families in need, or stimulating young minds to become better. Now, that's simply magnificent! That's why we have chosen this next project. Here are the details. "Ajedrez en Las Escuelas' means "Chess in Schools". This is an after school program that was started by a resident here in Valle Escondido, and is backed by the Mayor and the Panamanian Chess Federation. So far it is in 2 out of the 17 public schools. Did you know Chess fosters logic, critical thinking, and creativity, enhances reading and math skills, increases self-esteem, and improves concentration and memory? Because Chess provides so many great benefits for our children, our goal is to raise money for "Ajedrez en Las Escuelas' to supply teachers with necessary materials to implement "Chess in Schools". "Ajedrez en las Eschulas"- impacting our children for brighter futures. Join us for this event September 26 at 6:00 pm. $25 per person at the door includes a 3 course meal. We will have live music, silent auction, raffles, prizes, and a rubber ducky race down the river! Pick up your rubber ducky in advance for $5 or $6 at the door. The numbered ducks will be dropped into the river and race to the finish line. 1st place wins 50% of the pot and the other 50% goes to "Chess in Schools".
