We are known as “2 Guys and a Cooler”. A simple philosophy keeps us busy every single day. Convenient food that’s fast, affordable, and delicious. We strive to bring to the Tuesday market prepared frozen dinners that are convenient and sumptuous. All for the price of a typical Panamanian Lunch or Dinner. Exotic, Comfort Food, or Regional our style of cooking spans the globe. We have an ever changing menu that you will never get bored with. Something for everyone we say. Gluten free, Vegetarian, Atkins, Meat-a-terian. We make Entrees, sides, desserts, breads and from time to time you might even find fresh mushrooms that we grow ourselves. We are organic farmers, chefs, and parents of 3 wonderful children who are always hungry; so we never stop cooking. This week we are celebrating our 1 year anniversary at the BCP!!! A big thank you goes out to the entire community for your love and support.
Once a week I send out an email with our menu. A full and complete listing of all of our offering for the week. We typically sell out so most of our customers send us pre-orders and they pick up their order at the BCP Tuesday market between 9am and noon. Our booth is located on the same side as Finca Santa Mart and Dr Drew and we are just across from Emily’s Honey. You will see us there. Just look for 2 Guys and a Cooler…….

We have prepared this week’s menu. This week we have decided to add a few new items and bring back a couple favorites. I am delighted to have Pot Pies this week… It is a very special menu item that has been number 1 on our selection since the beginning. Also we will have a gourmet Turkish Baklava available. Cecelia has made the Pholourie with Caribbean fried rice and Mediterranean Stuffed peppers again; as I have made a Cajun Stuffed pepper and a few other cool dinners Be sure to read below. One of the best compliments that we have received about our menu was the diversity in the food. We strive to bring a menu that is full of different flavors and full of completely different choices. As a dining family we know how great it is to be able to have so many different lunch and dinner choices. We hope that you enjoy our selections this week and if you see anything that you like please send me an email with your order. You can pick it up at the BCP on Tuesday morning or you can come by my place on Monday after 2pm for an early pick up.

Chicken Pot Pies $10.00 (Regular Size) : I am so proud to be able to bring this amazing dining experience to Boquete again!! We took a break from making this delicate comfort food so that we could get settled into our place first. This particular dish takes a lot out of us as it has so many steps that are crucial in making the pot pie simply perfect. Starting with the most important part of all; the crust. We hand make the perfect buttery and flakey pot pie crust. Using 8 pounds of butter we make enormous batches. Next comes the filling. Carrots, celery, peas, and chicken. All of which are cooked in a manner to bring out their delicious flavors. The gravy comes last. Nice and rich made with our delicate and stunning chicken stock. Each pot pie will be an experience and will be worth the time and the wait. It has been our most popular dish for over a year and it is now back for you to enjoy. Sheppard’s Pie $8.00 (regular) 5 remaining: Another comfort food that simply hits the spot. Minced meat perfectly seasoned with rosemary and thyme. A touch of seasonings with the addition of peas, carrots, and corn make this creamy mashed potato topped meat pie a meal that satisfies. Enjoy either this size which feeds 2 – 3 adults.
Cajun Stuffed Bell Peppers $8.00 2 remaining: There are a few treats that remind me of home and this is certainly one of them. A combination of ground Pork and Beef mixed with perfectly sautéed button mushrooms, bell peppers, onions, and celery. All mixed with rice and stuffed into a delicately blanched bell pepper. All of this is topped with a touch of Parmesan cheese, mozzarella, bread crumbs, and a homemade special Cajun seasoning blend. Served over a bed of caramelized onions, bell peppers, and sweet corn.
Gnocchi Bolognese a la l ‘olive y parmesana $8.00: WOW! That’s all I have to say. Hand crafted gnocchi is made fresh for this dish. Delicious and no artificial preservatives are contained in this potato pasta. Tossed with olives, parmesan, and our delicious Italian meat sauce made with real Italian sausage that’s been slow cooked and reduced in a red wine sauce. Absolutely fantastic!! SOLD OUT
Mexican Beef Burritos $6.00 4 remaining: Beef burritos are on the menu this week!! These huge beef burritos are like small logs. Easily will feed 2 adults and is loaded with refried pinto beans and homemade salsa as well as fresh tomatoes, onions, jalapenos, cheddar, mozzarella, Mexican beef, and cilantro. Add a touch of sour cream to make this OVER STUFFED beef burrito a lunch or dinner hit!!
Smothered Chicken Burritos $8.00 3 remaining: When we were asked to do chicken burritos last week we gladly agreed. In true “Two Guys” fashion though we had to “beef” them up. A fajita style chicken that’s been stuffed into a huge flour tortilla and stuffed with Mexican rice, tomatoes, jalapenos, salsa, our 3 cheese blend, a touch of cumin and oregano. All of this is wrapped and smothered with our very own mushroom cream sauce utilizing button, crimini, and button mushrooms. This is truly a gourmet burrito. Feeds 2 adults.
Baked Spaghetti $10.00 5 Remaining: With just under 3 pounds this entrée is a meal fit for a party. Easily feeds 2 - 3 adults and is a combination of Monterrey Jack, Mozzarella, and Cheddar Cheese mixed with our home-made pasta sauce and meat sauce. Utilizing real house crafted Italian sausage and beautiful ground beef you will get several layers of delicious pasta, cheese, meat and sauce. Bake and enjoy.
Chili Mac n’ Cheese $8.00: We (as a family) tend to find comfort in food. From the Mediterranean to South Texas our cuisine travel all over the word. This week we will be enjoying a Texas style Chili Mac and Cheese. Home cooked chili using ground beef and pork mixed with rotini noodles and a combination of our favorite cheeses to produce a dinner that just makes you feel good inside. Rich with flavor and full of depth this dinner will feed 2 adults. SOLD OUT
French Onion Crispy Chicken Dinner $8.00: I only made a few this week due to lack of space but this popular dish will be available if you reply quickly. Lightly battered French style onions atop a piece of chicken breast that has been marinating in a mustard and Worchester sauce. Baked over a bed of vegetable infused spiral pasta and lightly tossed with a basil pesto. This dish feeds 2 and is a crowd favorite. SOLD OUT
Texas Chili $8.00 4 Remaining: My famous chili continues to sell out each week. Thank you!! I have made another batch due to the overwhelming requests. We really appreciate the feedback by the way!!. Using ground pork, bacon, ground beef, and loads of great Chipotle spices we have created a chili masterpiece. Medium Spicy and goes great over rice or by itself this chili will bring comfort to those “chili” rainy nights in Boquete. Feeds 2 adults and has over 2 pounds of chili.
Italian Lasagna $10.00 1 Remaining: An Italian classic this Lasagna is ready for the oven. Made with homemade herb ricotta cheese, homemade pasta sauce, Italian sausage, and ground beef you will be delighted as to the subtle flavors that this pasta dish will deliver. Noodles just slightly undercooked so as to remain together in the baking process you will get the first bake with this entrée!! Just pop it in, bake, and enjoy. Feeds 2
Eric’s Extra Special Meatloaf $8.00 5 Remaining: We sold out of meatloaf so fast last week we were blown away. This week I have whipped it up again. Enjoy this classic comfort food that’s extra special this week. I have combined beef and pork with fresh herbs and spices to build the perfect meatloaf. Topped with strips of bacon and coated in my very own tomato based pepper sauce. The sauce is deep and rich with flavor. Peppery and loaded with chunks of hearty veggies this sauce is a perfect topping to this “kicked up” meatloaf!! Served with herb roasted potato wedges. You will love this dinner for 2. Penang Chicken $5.00 6 Remaining: This wonderful Thai dish has gotten even better. Fresh ingredients, bigger portions, and more chicken Utilizing ingredients from our garden we are able to make the freshest red curry paste around. Chicken Stir fried in coconut oil then slow cooked in coconut milk this Thai dish is a dinner for 1 and comes with chopped peanuts and sliced Kaffir Lime leaves. Serve over rice, noodles, or with potatoes.
Vegetarian (The selections this week have been brought back by popular demand. Don’t forget our Vegetarian Panini’s and Salads on the menu)
Pholourie w/pineapple mango chutney and a side of Caribbean Pineapple fried rice $8.00 4 Remaining: (Due to the overwhelmingly positive response from last week Cecelia has decided to make this entrée again!!) This amazing green split pea vegetarian dish is hard to put into words. It’s the best she’s ever made it!! Pholourie is a split pea “fritter” that is served up like crab cakes. This is a gluten free meal made with caramelized onions and rice flour. A wonderful blend of seasonings make this vegan dish one to remember. Two fritters are served up and topped with our sweet and mildly spicy pineapple and tart mango chutney with a hint of chile ancho. All of this is then paired with a side of Caribbean pineapple stir fry rice and a touch of “Shadow Benny” or culantro. Talk about utilizing fruits and vegetables in this wicked rice dish.
Mediterranean Stuffed Red Bell Peppers Over Sautéed Onions and Carrot ribbons $7.00 5 Remaining: Mediterranean Stuffed Red Bell peppers with brown rice cooked perfectly and tossed with caramelized onions, sautéed mushrooms, black olives, sun dried tomatoes, chick peas, parmesan cheese and topped with mozzarella cheese. Served over a bed of brown rice, caramelized onions and carrot ribbons.
Grilled Gourmet Panini’s (Our Panini’s are made using only the finest ingredients. We bake fresh French bread, use gourmet cheese, amazing cuts of meat, and spreads that will make your mouth water. We spend an enormous amount of time sourcing out these ingredients for you to have the perfect Panini experience. Each Panini is vacuum sealed and frozen. Once you buy it all you have to do is pop it in the oven for 25 minutes and VOILA!! You have a perfect, crispy, delicious, gourmet Panini!!)
(V)Grilled Vegetable Panini (V) $4.00 1 Remaining: Eggplant, Zucchini, roasted bell peppers (Red Yellow and green) make up the meat of this Panini. Drizzled with balsamic vinegar and olive oil and topped with mozzarella cheese.

The flavors that are combined in this Panini are simply extraordinary. Salads (New This Week)
(V)5 Greens Chipotle Mango Salad $6.00: If you are reading this then you have to admit that you’re at least curious… Break away from the normal routine and try this beautiful and delicious salad. A new addition to our menu using a touch of our organic home grown arugula, romaine lettuce, redina, lettuce, mantilla lettuce, and Oak Leaf lettuce. This lettuce combination is magical and adds a depth of flavor to your salad. Textures and flavors run thick through this very simple and delicate lunch or dinner. We use a combination of perfectly ripened black grapes and toss them with an amazing feta cheese. We then add walnuts and red onions for a final touch of flavor. Our final fingerprint comes in our homemade salad dressing. In a separate bag we will provide you with our chipotle mango vinaigrette dressing. This dressing uses fresh, sweet, and perfectly ripened mangos, honey, olive oil, a pinch of chipotle powder (This adds depth and layers to your salad), red wine vinegar, salt and pepper. This dressing is simply brilliant!!
